Steps:
- Preheat the oven to 350 degrees F.
- Rinse and pat dry the chicken. Salt and pepper liberally and allow to temper on a cutting board while you prepare the garlic. In a large ovenproof saute pan over medium heat, cook the whole garlic cloves in olive oil and butter, stirring occasionally, until lightly golden, about 10 minutes. Remove the garlic from the pan and set aside. Increase the heat to medium high and brown the chicken skin-side down until the skin is golden and crispy, about 5 minutes. Turn the chicken over, sprinkle on herbes de Provence. Add the garlic back to the pan and place hot pan in oven. Bake the chicken until cooked through, about 25 minutes. Once the chicken is done, remove chicken thighs and garlic to a platter. Place the pan over medium-high heat and sprinkle the drippings with flour and stir to incorporate. Deglaze the pan with the stock and lemon juice. Pour the sauce over the chicken on the platter and serve with bread for sauce-mopping and garlic-spreading.

Tips:
- Choose the right chicken: For this recipe, it's best to use a whole chicken that is about 3-4 pounds. A larger chicken will take longer to cook, so adjust the cooking time accordingly.
- Prepare the garlic cloves: Before roasting, smash and peel the garlic cloves. This will help release their flavor and make them more tender.
- Season the chicken generously: Use a combination of salt, pepper, paprika, and garlic powder to season the chicken inside and out. This will give it a delicious flavor.
- Roast the chicken at a high temperature: Start by roasting the chicken at 425°F (220°C) for 30 minutes. This will help to brown the skin and seal in the juices.
- Reduce the temperature and continue roasting: After 30 minutes, reduce the temperature to 350°F (175°C) and continue roasting the chicken for another 1-1.5 hours, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest before carving: Once the chicken is cooked, let it rest for 10-15 minutes before carving. This will help the juices redistribute throughout the meat.
Conclusion:
Roasted garlic clove chicken is a delicious and easy-to-make dish that is perfect for any occasion. By following these tips, you can create a perfectly roasted chicken that is sure to impress your family and friends. Serve the chicken with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad.
