10 large garlic cloves, unpeeled
2 tablespoons honey
2 tablespoons apple cider vinegar
2 tablespoons apple cider
1 tablespoon Dijon mustard
8 cups bite-size pieces romaine lettuce (1 large head)
1 cup crumbled Gorgonzola cheese
Spiced Pecans

Steps:

  • Preheat oven to 350°F. Toss oil with garlic in small baking dish. Cover dish tightly with foil. Bake until garlic is golden and tender, about 45 minutes. Cool. Squeeze garlic from skins. Reserve oil.
  • Transfer roasted garlic to processor. Add honey, vinegar, cider and mustard and blend well. With processor running, slowly add reserved garlic oil. Season dressing to taste with salt and pepper.
  • Toss lettuce with 1/2 cup Gorgonzola cheese and enough dressing to coat. Sprinkle with remaining 1/2 cup cheese and Spiced Pecans and serve.

1/2 pound frisee, washed, dried and torn into bite-sized pieces
1/4 cup Roasted Garlic Vinaigrette
Salt and freshly ground black pepper
3 plum tomatoes, quartered

Steps:

  • For the vinaigrette:
  • Combine the garlic, vinegar, mustard, honey, lime juice and salt and pepper, to taste, in a blender and blend until smooth. With the motor running, slowly add the oil until emulsified.
  • For the salad:
  • Place the frisee in a large bowl, add 1/4 cup of the vinaigrette, season with salt and pepper, to taste and toss to coat. Put the tomatoes in a bowl, add a few tablespoons of the dressing, season with salt and pepper, to taste, and toss to coat.
  • Divide the frisee among 4 to 6 large plates, arrange 3 of the tomato quarters around the perimeter of each plate. Garnish with shaved cheese and chopped cilantro. Drizzle with the remaining vinaigrette and serve.

4 tablespoons shredded Parmesan, plus 1/4 cup
3/4 cup Caesar dressing
4 cloves roasted garlic
1/4 cup mayonnaise
1 (10-ounce) bag chopped romaine hearts
1 cup seasoned croutons

Steps:

  • Preheat broiler. To make Parmesan crisp: place 3-inch ring mold on baking sheet. Sprinkle 1 tablespoon of shredded parmesan into mold. Repeat 3 more times so there are 4 separate parmesan disks. Lay out crisps on a foil covered pan. Place under broiler for 3 to 4 minutes watching carefully until Parmesan turns golden brown. Remove from broiler and let cool.
  • In a blender combine Caesar dressing, roasted garlic cloves and mayonnaise. Blend on medium speed until creamy.
  • In a large bowl, add romaine, 1/4 cup Parmesan and croutons. Toss with salad dressing.
  • Carefully peel Parmesan crisps from foil.
  • Serve on chilled plates with Parmesan crisps upright in salad.

I've left the recipe as he wrote it, but I now skip the 3 tablespoons of olive oil, and only add about 1/2 of the oil from the roasted garlic. The flavor is great.

12 large garlic cloves, peeled
4 slices bacon, chopped
1/4 cup sherry wine vinegar

1 1/2 teaspoons light molasses
1 1/2 teaspoons fresh tarragon or 3/4 teaspoon dried tarragon, chopped
1 1/2 cups baby spinach leaves, 6 ounces
1 red onion, thinly sliced
1 cup blue cheese, crumbled

Steps:

  • Preheat oven to 375.
  • Combine 1/4 cup oil and garlic in small baking dish.
  • Cover with foil; bake until garlic is very tender, about 35 minutes.
  • Using slotted spoon, transfer garlic to work surface and finely chop.
  • Transfer garlic to medium bowl. Reserve roasted garlic oil.
  • Cook bacon in large skillet over medium heat until crisp, about 4 minutes.
  • Using slotted spoon, transfer bacon to paper towels.
  • Pour drippings into medium bowl.
  • Add vinegar, shallot, mustard, honey, molasses and tarragon and whisk to blend.
  • Add roasted garlic, garlic oil, bacon and remaining 3 tablespoons olive oil and whisk to blend well.
  • Season dressing to taste with salt and pepper.
  • Place spinach, sliced onion and blue cheese in large bowl.
  • Toss with enough dressing to coat.
  • Serve.

1 cup olive oil (not extra virgin)
1/3 cup balsamic vinegar
1/3 cup water
1 teaspoon salt

1 tablespoon Dijon mustard

Steps:

  • In an unoiled, small heavy skillet, roast the unpeeled garlic cloves on medium heat, turning them occasionally; cook the garlic for about 10-15 minutes, until it's soft and covered with dark spots.
  • Test for doneness by pressing a clove with a spoon- if you see small bubbles of juice bursting through the skin, remove them from the skillet.
  • When cool enough to handle, peel the cloves.
  • In a blender or food processor, puree the garlic with the oil, vinegar, water, salt, pepper and mustard until smooth.

  • Preheat oven to 450°F.
  • Quarter potatoes and in a bowl toss with shallots, 1 1/2 teaspoons oil, and salt and pepper to taste. Transfer mixture to a shallow baking pan.
  • Wrap garlic tightly in foil and put in pan with potatoes.
  • In a large bowl toss kale with remaining 1 1/2 teaspoons oil and salt and pepper to taste until combined well. Arrange kale in one layer in another shallow baking pan. Roast kale, potato mixture, and garlic in middle and bottom thirds of oven, switching position of pans in oven halfway through roasting and stirring vegetables occasionally, until potato mixture is golden brown and tender, kale is crisp, and garlic is soft, about 15 minutes. Transfer vegetables (except garlic) to a bowl and season with salt and pepper. Carefully remove garlic from foil and peel. In small bowl with a fork mash garlic with vinegar until smooth and season with salt and pepper. Add dressing to vegetables and toss. Potatoes may be made 4 hours ahead.

  • In a small skillet, combine the garlic cloves and the oil. Over a low heat, caramelize the garlic until browned and soft, about 20 minutes.

Steps:

  • Heat oven to 350 degrees.

  • Slice woody ends from garlic cloves, leaving papery skin intact. Lay out a 10-inch square of Reynolds Wrap® Aluminum Foil, set garlic cloves sliced-side down in the center and drizzle with 1 tablespoon olive oil and a pinch of sea salt. Carefully pull up corners and crimp the top to secure foil tightly around garlic. Place in a small ovenproof dish and bake 15 minutes, or until garlic is translucent and very soft. 3 tablespoons parmigiano-reggiano cheese, grated
1 tablespoon fresh lemon juice

  • Combine all ingredients and blend until smooth. I use my handy chopper.
  • If the dressing is too thick, thin with more cream.
  • To roast garlic - slice the top off a whole head of garlic. Place garlic on a piece of aluminum foil and drizzle with olive oil and salt. Wrap up and bake at 400 for about 40 minutes.

1/2 cup sour cream

1 clove garlic, pressed
2 teaspoons cider vinegar

Steps:

  • Potatoes and Carrots: Preheat oven to 400 degrees. Brush a baking sheet with olive oil. Toss potatoes and carrots into a mixture of fresh rosemary leaves, salt and cracked pepper and lay them cut side down on a baking sheet. Brush with olive oil and bake until potatoes are toasted brown, and carrots are tender- about 30 minutes.
  • Peppers and Tomatoes Heat the broiler. Halve tomatoes lengthwise. Place whole peppers and halved tomatoes on a baking sheet as close to the flame as possible. Allow skin to blacken, turn when needed. Remove from the oven and close peppers in a brown paper bag to steam. When cool, peel and remove seeds and core. Slice peppers into 1/2-inch slices. Leave tomatoes halved.
  • Onions, and Mushrooms: Prepare grill. Brush onions and portobellos with olive oil. Sprinkle with salt and pepper. Grill until soft. Slice mushrooms into 1/2-inch slices.
  • Salad: Whisk together dressing ingredients. Toss with grilled vegetables. Garnish with sprigs of rosemary or fresh basil leaves. Serve with a hot, crusty loaf of peasant bread.

1/4 cup sherry vinegar
1 sprig fresh rosemary
1/2 cup extra-virgin olive oil

Steps:

  • Preheat the oven to 400 degrees. Wrap garlic in aluminum foil. Place garlic on rack in oven, and roast until very tender, about 1 hour. Remove from oven, and let cool in foil.
  • Cut off tops of garlic heads with a serrated knife. Squeeze garlic pulp into a small saucepan. Place over medium-low heat, and whisk in vinegar. Rewhisk, if necessary, before serving. Finely chop rosemary, and add to saucepan. Slowly whisk in olive oil, salt, and pepper, and turn off heat; keep dressing warm until ready to use.

2 lbs fresh asparagus
1 1/2 tablespoons virgin olive oil
3 tablespoons light soy sauce (if using regular soy sauce, add 2 tablespoons more water) or 3 tablespoons reduced sodium soy sauce (if using regular soy sauce, add 2 tablespoons more water)
1 tablespoon minced garlic
1 teaspoon sugar
2 tablespoons water

Steps:

  • Preheat the oven to 475 degrees. Snap off the tough woods ends of the asparagus and rinse the spears. Drain on paper towels. Spread the asparagus out on a cookie sheet and brush or toss with the olive oil.
  • Roast the asparagus 10 to 12 minutes, or until tender when pierced with the tip of a knife. Alternatively, you can grill or steam the asparagus for 4 to 5 minutes, until tender. Arrange the asparagus on a serving plate.

1 head garlic, unpeeled
1/4 cup olive oil
1/2 teaspoon oregano
1/4 salt
1/4 teaspoon pepper
2 tablespoons balsamic vinegar
1 -2 tablespoon water
2 sun-dried tomatoes, minced
8 cups romaine lettuce leaves, torn
1 tomatoes, cored and cut into wedges
1 cup cucumber, diced
1/2 cup kalamata olive
1/2 cup feta cheese, crumbled

Steps:

  • Preheat oven to 400.
  • Using a knife, slice off 1/4 to 1/2 inch from the top of unpeeled garlic head to expose cloves. Place garlic in a small dish and drizzle with 1/2 tsp oil. Cover with foil, then bake in oven until garlic feels soft when pressed, 25 - 35 minutes. Remove from oven and cool. The recipe only calls for 5 - 6 cloves. Use the rest for other dishes.
  • Mash 6 cloves with a fork. Stir in oregano, salt and pepper. Whisk in remaining oil, vinegar and enough water for a dressing consistency. Stir in sun-dried tomatoes. Taste and add additional salt if needed.
  • In a large bowl, toss lettuce with tomatoes and cucmber. Toss with dressing. Add olives and cheese and toss again.

1 garlic head
1/3 cup white wine vinegar
1 teaspoon finely chopped fresh rosemary
2/3 cup extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees. Wrap garlic in foil. Roast until very tender, about 1 1/2 hours. Let cool slightly. Can be refrigerated in an airtight container overnight.
  • Cut the garlic head in half crosswise. Squeeze pulp into a small saucepan, and place over medium-low heat. Whisk in vinegar and rosemary. Gradually add oil, whisking constantly. Use immediately.
