SPINACH SALAD WITH ROASTED GARLIC AND BACON DRESSING

Spinach Salad With Roasted Garlic and Bacon Dressing image

This recipe comes from Chef John Currence of the City Grocery Restaurant in Oxford, MS. The dressing for this salad has a wonderful flavor, but I found it too oily as written. I've left the recipe as he wrote it, but I now skip the 3 tablespoons of olive oil, and only add about 1/2 of the oil from the roasted garlic. The flavor is great.

  • Roast the garlic properly: Roasting the garlic mellows its flavor and makes it sweeter. To roast the garlic, cut off the top of the head of garlic, drizzle it with olive oil, and wrap it in foil. Roast the garlic at 400 degrees Fahrenheit for 45 minutes to an hour, or until the cloves are soft and golden brown.
  • Use a good quality olive oil: The olive oil you use will make a big difference in the flavor of the dressing. Choose a high-quality extra virgin olive oil that has a fruity, peppery flavor.
