Here's what you need: russet potatoes, baking soda, salt, olive oil, garlic, fresh rosemary, black pepper, salt, pepper, fresh parsley leaf

Provided by Merle O'Neal

Categories     Breakfast

Yield 5 servings

Number Of Ingredients 10

13 russet potatoes, cut into 1-inch (2 1/2 cm) pieces
1 teaspoon baking soda
1 teaspoon salt
¼ cup olive oil
2 tablespoons garlic, minced
2 tablespoons fresh rosemary, or fresh thyme, finely chopped
1 teaspoon black pepper
salt, to taste
pepper, to taste
1 small handful fresh parsley leaf, minced to garnish

Steps:

  • Fill a large pot with water and boil. Add salt, baking soda, and potatoes, and stir.
  • Return to a boil, reduce to a simmer, and cook for 10 minutes after returning to a boil. A fork should easily pierce the potato pieces by the end. Drain and let sit one minute while moisture evaporates.
  • Combine olive oil, rosemary (or thyme), garlic, and a few grinds of black pepper in a small saucepan and heat over medium heat. Stir constantly until garlic just begins to turn golden, about 2-3 minutes.
  • Immediately strain oil through a fine-mesh strainer over the potatoes. Add salt and pepper to taste, and mix.
  • Shake the pot that the potatoes are in so that they slam against all sides of the pot, this will loosen the outer layer of the potatoes to form a mashed layer around each potato piece.
  • Preheat oven to 425°F (220°C).
  • Transfer potatoes to a large rimmed baking sheet and separate them, spreading them out evenly.
  • Transfer to oven and roast, without moving, for 30-35 minutes.
  • Using a thin, flexible metal spatula flip potatoes. Continue roasting until potatoes are deep brown and crisp all over, turning and shaking them a few times during cooking, 30 to 40 minutes longer.
  • Transfer potatoes to a large bowl and add the garlic-rosemary mixture (optional) and minced parsley. Toss to coat and season with more salt and pepper to taste. Serve immediately.
  • Enjoy!

SCALLOPED POTATOES WITH GARLIC AND CREAM

Scalloped Potatoes With Garlic and Cream image

This recipe is a favourite with many of my friends and is popular and much requested dish at Pot Luck dinners. This recipe is adapted from a recipe in Jacques Pepin's "A French Chef Cooks at Home" pub. 1975. Serves 6 to 8

Provided by Soupcon

Categories     Potato

Time 1h55m

Yield 6-8 serving(s)

Number Of Ingredients 5

3 -4 lbs boiling potatoes (such as Yukon Gold or red waxy potatoes)
1 quart heavy cream or 1 quart whipping cream
3 -4 cloves garlic, peeled and crushed
2 teaspoons salt, to taste
pepper

Steps:

  • Peel and thinly slice enough potatoes to almost fill a 6 quart covered heat proof caserole. Do not immerse the sliced potatoes in water as this will remove the surface starch needed to thicken the dish.
  • Bury the crushed garlic in the sliced potatoes. Add enough cream so that you can see the cream near the surface and through the potatoes. Season to taste with salt and pepper.
  • Bring slowly to a simmer on top of the stove, cover and place in a 350 degree oven for approx 1.5 hours (1 and 1/2 hours)or until done uncovering the dish for the last 1/2 hour.
  • The top should be nicely browned and a knife should pierce the potatoes easily. Most of the liquid should have been absorbed by the potatoes and the remainder be fairly thick.
  • Let stand for 20 minutes before serving.
  • Great cold the next day with a green salad.

CHEESY GARLIC SCALLOPED POTATOES

Cheesy Garlic Scalloped Potatoes image

They are rich, but oh so good! You can vary the cheeses according to taste and add onions, too. I originally got the recipe from AllRecipes, but I have altered a couple of things that helped the recipe we believe. It is a family favorite!

Provided by SweetsLady

Categories     Potato

Time 1h50m

Yield 6 serving(s)

Number Of Ingredients 8

1 1/2 lbs potatoes, thinly sliced (I use my KitchenAid slicer attachment to make thin. SaladShooter or mandolin works well, too, as lon)
2 tablespoons butter, divided
1 pint heavy cream (or to make it lighter I have made with 2 cups milk and 2 T. cornstarch heated until thicker)
2 garlic cloves, minced
salt and pepper
2 cups cheddar cheese, shredded
4 slices provolone cheese
1/2 cup parmesan cheese or 1/2 cup romano cheese, grated

Steps:

  • Preheat the oven to 350 degrees F (165 degrees C).
  • Grease a 1 1/2 quart or larger casserole dish with butter or nonstick spray.
  • Layer half of the potato slices in the bottom of the casserole dish.
  • Dot with half of the butter cut or pinched into small pieces.
  • Arrange half of the garlic slices over the potatoes, then pour half of the heavy cream over.
  • Sprinkle one cup of Cheddar cheese over the layer, and season with salt and pepper. Repeat layering of potatoes, butter, garlic, cream and Cheddar cheese, then top with the slices of provolone cheese.
  • Season again with salt and pepper. Cover with foil that the underside has been sprayed with cooking spray.
  • Bake for 1 hour in the preheated oven, then sprinkle the Parmesan or Romano cheese over the top.
  • This will create a semi-hard cheese crust. Continue baking uncovered for another 30 minutes, or until potatoes are tender when tested with a fork.

Impress guests with these deliciously creamy scalloped potatoes flavoured with garlic and parmesan. They're a great side dish for many dinners

Provided by Adam Bush

Categories     Side dish

Time 2h10m

Number Of Ingredients 8

50g unsalted butter, plus extra for the dish
1 onion, thinly sliced
2 garlic cloves, chopped
50g plain flour
500ml whole milk
250ml chicken or vegetable stock
1kg Maris Piper potatoes, thinly sliced (use a mandoline for the best results)
75g parmesan, finely grated

Steps:

  • Heat the oven to 180C/160C fan/gas 4 and butter a deep 20 x 30cm baking dish. Melt the butter in a pan over a medium heat and cook the onion and garlic with a pinch of salt for 8-10 mins until the onion has softened slightly. Tip in the flour, stir well, then cook for a few minutes more. Mix the milk and stock together, then gradually pour this in, whisking well between additions until everything is incorporated and you have a smooth sauce. Simmer for a few minutes, then season well.
  • Lay half the sliced potatoes in a single layer in the buttered dish, slightly overlapping them if needed. Pour over half the sauce, then scatter over half the parmesan. Arrange the remaining potatoes on top, then pour over the remaining sauce and scatter with the remaining parmesan. Cover with foil and bake for 1 hr, then remove the foil and bake for another 30 mins until golden on top.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the taste of your scalloped potatoes. Look for creamy, white potatoes, such as Yukon Gold or Russet potatoes, and fresh garlic.
  • Slice the potatoes thinly: This will help them cook evenly. Aim for slices that are about ⅛-inch thick.
  • Don't overcrowd the pan: If you crowd the pan, the potatoes will steam instead of roast, and they won't get crispy.
  • Roast the potatoes until they are golden brown: This will give them a delicious, caramelized flavor.
  • Use a flavorful cooking liquid: Chicken broth, vegetable broth, or even milk can be used to add flavor to the scalloped potatoes.
  • Add some herbs and spices: Fresh herbs, such as thyme or rosemary, and spices, such as garlic powder or paprika, can add a lot of flavor to the dish.
  • Garnish with fresh herbs: Before serving, garnish the scalloped potatoes with fresh herbs, such as parsley or chives, for a pop of color and flavor.

Conclusion:

Roasted Garlic Scalloped Potatoes are a classic side dish that is perfect for any occasion. They are easy to make, and they are always a crowd-pleaser. So next time you are looking for a delicious and easy side dish, give Roasted Garlic Scalloped Potatoes a try.
