Tips:

  • Choose the right peppers. Bell peppers of any color can be used in this salad, but roasted red peppers have a sweeter, more intense flavor.
  • Roast the peppers properly. Roasting the peppers brings out their natural sweetness and smokiness. To roast the peppers, preheat your oven to 400 degrees Fahrenheit. Cut the peppers in half lengthwise and remove the seeds. Place the peppers on a baking sheet lined with parchment paper. Drizzle the peppers with olive oil and season with salt and pepper. Roast the peppers for 20-25 minutes, or until they are softened and slightly charred.
  • Use a good quality blue cheese. Blue cheese adds a salty, tangy flavor to the salad. Look for a blue cheese that is creamy and has a strong flavor.
  • Don't overdress the salad. A simple vinaigrette is all you need to dress this salad. Overdressing the salad will weigh it down and make it soggy.

Conclusion:

Roasted Pepper and Onion Salad with Blue Cheese is a delicious and easy-to-make salad that is perfect for a summer cookout or potluck. The roasted peppers and onions have a sweet and smoky flavor, while the blue cheese adds a salty, tangy kick. This salad is sure to be a hit with your guests!
