4 large Portobello mushrooms, cleaned and stems removed
3 cloves garlic, finely chopped
1/4 cup dry sherry
5 tablespoons olive oil
2 1/2 teaspoons kosher salt
4 ounces mild blue cheese, at room temperature
1 large onion, thinly sliced
4 ounces spinach leaves (about 5 cups)
4 burger buns, toasted

Steps:

Time 1h

Yield 6 servings

Number Of Ingredients 9

6 large portobello mushrooms (about 1 1/2 pounds), stems discarded
3 tablespoons good olive oil
1 tablespoon balsamic vinegar
Kosher salt and freshly ground black pepper
2 1/2 cups good chicken stock, preferably homemade
2 cups half-and-half
3/4 cup fine cornmeal
1/4 cup imported Italian mascarpone cheese
4 ounces Gorgonzola piccante, crumbled

Steps:

  • Preheat the oven to 400 degrees.
  • Brush the mushroom caps gently with a clean cloth to wipe away any dirt. Arrange them, underside up, on a sheet pan, drizzle with the olive oil and balsamic vinegar, then sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Bake for 20 minutes, until tender. Set aside. Lower the oven to 375 degrees.
  • Meanwhile, make the polenta. Pour the stock and half-and-half into a large saucepan and bring it to a boil. Lower the heat and, while whisking constantly, slowly sprinkle the cornmeal into the boiling liquid. Simmer for 6 to 8 minutes, stirring almost constantly with a wooden spoon, until the polenta is thick and smooth. Off the heat, stir in the mascarpone, 1 teaspoon salt, and 1/2 teaspoon pepper. Pour into an 8 x 11 x 2-inch baking dish.
  • Arrange the mushrooms, underside up, in one layer over the polenta. Sprinkle on the Gorgonzola and bake for 25 to 30 minutes, until the polenta is bubbly and the cheese is melted. Sprinkle with salt and serve hot.

PAN SEARED PORTOBELLO MUSHROOMS WITH BACON AND BLUE CHEESE

Pan Seared Portobello Mushrooms With Bacon and Blue Cheese image

I just saw Michael Symon make this on The Chew today and I can't wait to try it! His helpful tips were: 1. No need to remove the gills from the Portobello mushroom for this recipe. Michael does suggest removing the gills when creating a sauce out of the mushrooms. 2. Use any type of stock in this recipe: vegetable, chicken, or beef. 3. Try this sauce on steaks or pork chops, too! If you omit the bacon and use the vegetable broth, it's a nice vegetarian dish. On the TV show, he also saved some of the blue cheese and crumbled it over the top of the dish once it was plated. Enjoy!

Time 40m

Yield 5 serving(s)

Number Of Ingredients 11

5 large portabella mushrooms (cleaned)
2 tablespoons butter
1/2 lb bacon (chopped)
1 onion (finely chopped)
3 tablespoons all-purpose flour
2 cups chicken stock
1/2 cup milk
3/4 cup blue cheese
1/2 cup parsley (chopped)
olive oil
salt and pepper

Steps:

  • Place a large saute pan over medium high and add 1 to 2 tablespoons of olive oil.
  • Add the bacon and cook until crisp, about 5 to 6 minutes. Remove the bacon with a slotted spoon and set aside.
  • Add the portobello mushrooms to the rendered bacon fat and season them with salt and pepper. Cook 3 to 4 minutes, and once golden brown, flip. Season again with salt and pepper and cook until golden brown, another 3 to 4 minutes.
  • Remove the mushrooms from the pan to a platter.
  • Add the onion, season with salt and pepper, and cook for 4 to 5 minutes, or until the onion is translucent.
  • Add the butter and then toss back in the bacon and then sprinkle the flour over the onion bacon mixture. Cook, stirring constantly, for 1 to 2 minutes, or until the flour begins to look sandy.
  • Slowly pour in the chicken stock and scrape up any brown bits on the bottom of the pan. Once the gravy starts to thicken and simmer, pour in the milk.
  • Add the blue cheese and cook until the gravy coats the back of a spoon, about 5 minutes. Taste and adjust seasoning.
  • Add the parsley, spoon the gravy on top of the mushrooms and serve.

ROASTED PORTOBELLO SALAD WITH BLUE CHEESE

Roasted Portobello Salad with Blue Cheese image

Categories     Salad     Cheese     Roast     Pastry

Yield serves 4 as a starter

Number Of Ingredients 9

3 tablespoons red-wine vinegar
1 tablespoon Dijon mustard
Coarse salt and freshly ground pepper
2/3 cup olive oil
4 large portobello mushrooms (1 1/2 pounds), stems removed, caps cleaned
3 heads endive, sliced crosswise 1/2 inch thick (about 4 cups)
8 ounces mesclun or mixed salad greens (about 10 cups)
1 small red onion, halved and thinly sliced
4 ounces blue cheese, crumbled

Steps:

  • Preheat oven to 450°F. In a small bowl, whisk together vinegar, mustard, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Slowly add olive oil, whisking to emulsify. Reserve 1/2 cup dressing to toss with the greens.
  • Place mushrooms on a baking sheet. Coat both sides with some of the remaining dressing (see below). Roast mushrooms, stem sides up, brushing with more dressing every 5 minutes, until they are tender, about 15 minutes.
  • Toss the endive, mesclun, onion, and blue cheese with reserved dressing, and divide among four salad bowls. Slice mushrooms 1/2 inch thick, and arrange pieces over each serving. Serve immediately.
  • Coating Mushrooms
  • A pastry brush is the best tool for coating the mushrooms with dressing, before and as they cook.

Tips:

  • Choose the right mushrooms: Look for large, firm portobello mushrooms with smooth, closed caps. Avoid mushrooms with any blemishes or bruises.
  • Clean the mushrooms thoroughly: Use a damp paper towel to wipe away any dirt or debris from the mushrooms. Do not rinse the mushrooms under water, as this can make them soggy.
  • Remove the stems: Use a sharp knife to remove the stems from the mushrooms. The stems are tough and fibrous, and they will not cook evenly with the caps.
  • Marinate the mushrooms: Marinating the mushrooms in a mixture of olive oil, balsamic vinegar, herbs, and spices will help to enhance their flavor. You can marinate the mushrooms for as little as 30 minutes or as long as overnight.
  • Cook the mushrooms over medium heat: Cooking the mushrooms over medium heat will help to prevent them from becoming tough. Cook the mushrooms for about 10 minutes per side, or until they are tender and slightly browned.
  • Top the mushrooms with your favorite toppings: Once the mushrooms are cooked, you can top them with a variety of toppings, such as blue cheese, crumbled bacon, sautéed onions, or roasted peppers.

Conclusion:

Roasted portobello mushrooms are a delicious and versatile dish that can be enjoyed as an appetizer, main course, or side dish. They are easy to make and can be customized to your liking. With a few simple tips, you can create a flavorful and satisfying meal that everyone will enjoy.
