1 onion, diced
2 cups diced potatoes
4 cloves garlic, minced
¼ cup canned garbanzo beans (chickpeas), drained
2 tablespoons olive oil
1 tablespoon dried thyme leaves
salt and pepper to taste
⅓ cup dry white wine
1 cup torn beet greens

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Place the beet, carrot, onion, potatoes, garlic, and garbanzo beans into a 9x13 inch baking dish. Drizzle with the olive oil, then season with thyme, salt, and pepper. Mix well.

16 small unpeeled red potatoes, each about 2 inches in diameter
2 large turnips, about 1 lb total weight
2 large parsnips
4 carrots, about 1 1/2 lb total weight
2 fennel bulbs
16 large shallots
3 tablespoons olive oil
kosher salt
fresh ground black pepper
3 garlic cloves, minced
1 tablespoon minced fresh thyme (or 1 t. dried crumbled)

Steps:

  • Preheat oven to 400 degrees.
  • Prepare all the vegetables for roasting.
  • Halve the small potatoes.
  • Peel the turnips and cut them into wedges ½ inch thick.
  • Peel the parsnips and carrots, then halve them lengthwise and cut into pieces 2 inches long.
  • Trim and core the fennel bulbs, then cut lengthwise into wedges ½ inch thick.
  • In a large gratin dish or roasting pan, combine the potatoes, turnips, parsnips, carrots, fennel, and shallots.
  • Add the olive oil and use your hands to toss the vegetables, coating them evenly.

I used rutabaga, potato, sweet potato, and red onion in my first attempt, but carrots, turnips, parsnips or leeks would also work well in this dish. This would make a good Thanksgiving side dish as it can be served warm or at room temperature.

1 parsnip, peeled and sliced
3 carrots, cut into large chunks
2 tablespoons olive oil, or as needed
