ROASTED SALMON GLAZED WITH BROWN SUGAR AND MUSTARD

Roasted Salmon Glazed With Brown Sugar and Mustard image

This is what we call around here a no-recipe recipe, the sort of meal you can cook once off a card and you'll know it by heart: salmon glazed with brown sugar and mustard. The preparation could not be simpler. Heat your oven to 400. Make a mixture of Dijon mustard and brown sugar to the degree of spicy-sweetness that pleases you. Salt and pepper the salmon fillets. Place them skin-side down on a lightly oiled, foil-lined baking sheet, slather the tops with the mustard and brown sugar glaze and slide them into the top half of your oven. They ought to be done in 12 minutes or so, and they pair beautifully with simple braised greens.

Time 30m

Yield 4 servings

Number Of Ingredients 4

1/2 cup mustard powder, preferably Colman's
1/2 cup sugar
2 pounds center-cut salmon fillet, about 2 inches thick at its thickest, with skin
2 1/2 tablespoons extra virgin olive oil

  • Heat oven to 250 degrees. In a small bowl whisk mustard, sugar and 1/2 cup water together. Set aside.
  • Cut salmon into four uniform portions. Pat dry with paper towel. Heat 1 tablespoon oil in a heavy ovenproof skillet over high heat; skillet should be large enough to hold salmon without crowding. Thickest part should still be raw in center.
  • Brush top of salmon with remaining olive oil and then with mustard mixture. Place in oven about 20 minutes, until medium-rare in center. (An instant-read thermometer inserted in thickest part should register 100 to 110 degrees.) Remove from oven, and serve.

Tips:

  • Choose the Right Salmon: Opt for wild-caught salmon over farmed salmon for a richer flavor and texture. Look for salmon with a vibrant, deep pink or orange color.
  • Prepare the Salmon Properly: Before cooking, pat the salmon fillets dry with paper towels to remove excess moisture. This will help the glaze adhere better and create a crispy skin.
  • Marinate the Salmon: Marinating the salmon in a flavorful mixture of olive oil, lemon juice, garlic, and herbs will enhance its taste and tenderness.
  • Cook the Salmon Perfectly: Cook the salmon to an internal temperature of 145 degrees Fahrenheit for medium-rare or 155 degrees Fahrenheit for medium. Overcooking will dry out the fish.
  • Make the Glaze While the Salmon Cooks: This will ensure that the glaze is hot and ready to brush onto the salmon just before serving.
  • Don't Overcook the Glaze: Cook the glaze over medium heat until it thickens slightly, but don't boil it. Overcooking will cause the glaze to become too thick and syrupy.
  • Brush on the Glaze Generously: Brush the glaze onto the salmon fillets liberally before serving. This will give the salmon a beautiful glossy appearance and enhance its flavor.
  • Serve Immediately: Roasted salmon is best served immediately after cooking. The glaze will start to set as it stands, so don't let it sit for too long before digging in.
