Time 55m

Number Of Ingredients 9

2 medium sweet potatoes, washed and dried
1 Tbsp olive oil, extra virgin
1 Tbsp parmesan cheese, grated
1 tsp smoked paprika (more if you like)
1 tsp coarse salt
1/8 tsp ground black pepper
1/8 tsp cayenne pepper
1/2 tsp garlic powder
1/2 tsp cumin

Steps:

  • 1. Preheat oven to 450 degrees.
  • 2. Cut potatoes into 1/4″ thin strips, or to desired thickness. NOTE: you can peel or not peel the potatoes. Soak potatoes in ice water for 30 minutes. Drain and blot dry with paper towels.
  • 3. Combine the dry ingredients in a ziploc bag. Add potatoes to bag; drizzle oil over potatoes. Seal bag and shake to coat potatoes with seasoning.
  • 4. Spread the potatoes evenly on a baking sheet prepared with parchment paper. Don't overcrowd the sheet, or have multiple layers of fries.
  • 5. Place in oven and bake 20-25 minutes. (May take more or less time, depending on the size of the fries.) Remove once the edges slightly begin to brown and fries begin to crisp.

Tips:

  • To make sure your fries are crispy, use a baking sheet that is not too crowded. If the fries are too close together, they will steam instead of roast.
  • Don't be afraid to experiment with different toppings. Try sprinkling your fries with chili powder, garlic powder, or even cinnamon.
  • If you want to make your fries ahead of time, you can roast them and then store them in the refrigerator for up to 3 days. When you're ready to serve them, reheat them in the oven at 350 degrees Fahrenheit for about 15 minutes.
  • Sweet potato fries are a great way to get your kids to eat their vegetables. They're also a healthy alternative to traditional French fries.
