2 medium Vidalia or other sweet onions, cut in 1-inch chunks
3 tablespoons olive oil
¼ cup amaretto liqueur
1 teaspoon dried thyme
Salt and freshly ground black pepper, to taste
¼ cup sliced almonds, toasted

  • Heat oven to 425 degrees F.
  • Toss first 6 ingredients in a shallow medium-sized baking dish.

2 medium onions, cut into eighths
1/4 cup butter or margarine, melted
1/4 cup firmly packed brown sugar
1/4 cup coarsely chopped pecans
1 teaspoon dried sage leaves

  • Heat oven to 450°. Place sweet potatoes and onions in roasting pan or rectangular pan, 13x9x2 inches. Drizzle with butter; toss to coat.

3 garlic cloves, minced
