CALIFORNIA GRILLED VEGGIE SANDWICH

California Grilled Veggie Sandwich image

I came up with this recipe to entertain friends. Since I am a semi-vegetarian and love to BBQ, I am always inventing something new. The first time I made this, my meat-lover friends raved about this dish! I prefer mesquite coals over gas barbeques...however, either works fine.

Time 50m

Yield 4

Number Of Ingredients 10

¼ cup mayonnaise
3 cloves garlic, minced
1 tablespoon lemon juice
⅛ cup olive oil
1 cup sliced red bell peppers
1 small zucchini, sliced
1 red onion, sliced
1 small yellow squash, sliced
2 (4-x6-inch) focaccia bread pieces, split horizontally
½ cup crumbled feta cheese

Steps:

  • In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.
  • Preheat the grill for high heat.
  • Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside.
  • Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn. Remove from grill, and layer with the vegetables. Enjoy as open faced grilled sandwiches.

Time 20m

Yield 1 serving(s)

Number Of Ingredients 4

2 slices sourdough bread (or bread of your choice)
1 ounce brie cheese, room temperature
1 tablespoon baked cranberry sauce (try Baked Cranberry Sauce)
1 tablespoon butter, softened

Steps:

  • Softened butter works best on a grilled cheese. Just let it sit out and then smear it all over the bread. You only need to butter one side of each slice. This is the side that will be grilled.
  • Smear the brie and roasted cranberries onto the side of the bread that is not buttered. And sandwich it with another buttered slice(with butter on the outside). All this butter and cheese is making me hungry!
  • In my opinion, a grilled cheese sandwich is best done in a iron skillet. You don't need it to be very hot. Turn the stove to a medium-high heat, and once the skillet is warmed, add the sandwich. Let it sit for two minutes and then flip it. It should come out perfect every time!

Tips:

  • Choose a good quality bread that will hold up well to the sandwich ingredients. A hearty whole grain bread or a ciabatta roll are good choices.
  • Roast the vegetables until they are caramelized and tender. This will bring out their natural sweetness and flavor.
  • Use a good quality brie cheese that is ripe but not too soft. A soft brie will melt too easily and make the sandwich difficult to eat.
  • Spread the brie cheese on the bread before adding the vegetables. This will help to prevent the cheese from melting out of the sandwich.
  • Add a layer of fresh arugula to the sandwich for a peppery flavor and a bit of crunch.
  • Drizzle the sandwich with olive oil or balsamic vinegar for extra flavor.
  • Serve the sandwich immediately while the cheese is still warm and melted.

Conclusion:

This roasted vegetarian sandwich with brie cheese is a delicious and easy-to-make meal. It is perfect for lunch or dinner, and it can be easily customized to your liking. With its roasted vegetables, creamy brie cheese, and fresh arugula, this sandwich is sure to please everyone at your table.
