ROCK STAR CHEESY STUFFED MEATLOAF

Rock Star Cheesy Stuffed Meatloaf image

This recipe comes from joyouslydomestic.com and is the best meatloaf recipe I've ever come across! I like to stuff the meatloaf with Mozzarella and top it with marinara sauce, making it sort of an Italian theme. You can also use a Mexican blend of cheese and top with salsa, so there are many ways to go with this recipe! I sometimes use croutons that you can buy at the store instead of the saltines. Just put them in a bag and crush them with a rolling pin and measure the same as the saltines. Times are approximate.

Time 1h15m

Yield 6-8 serving(s)

Number Of Ingredients 14

2 lbs ground meat (a 50/50 beef and pork combo is best.)
1 egg, slightly beaten
1/2 cup saltine, crushed
2 garlic cloves, peeled and grated
1 small onion, peeled and finely minced
1/4 green bell pepper, finely chopped (optional)
1 teaspoon salt
1 teaspoon fresh ground black pepper
1/2 teaspoon seasoning salt, if desired
1 pinch Anjou pear, any dried herbs you like
1/4 cup ketchup, plus more for the top
2 tablespoons Worcestershire sauce
2 ounces sliced mozzarella cheese
3 ounces shredded cheddar cheese or 3 ounces colby, blend

Steps:

  • Preheat oven to 350 degrees.
  • Spray a loaf pan with non-stick spray.
  • Combine all of the ingredients except for the cheese in a large mixing bowl. Do not over mix.
  • Divide the meat mixture in half.
  • Spread half of the meat mixture onto the bottom of the loaf pan.
  • Lay down the slices of mozzarella cheese and top with the shredded cheese.
  • Spread out the other half of the meat mixture on top of the cheese being careful not to disrupt the cheese layer too much. You can run a rubber spatula down the sides to really press the meat in towards the loaf to help seal everything inches You really want to seal in the cheese so that it doesn't ooze out.
  • Squirt some of the reserved ketchup onto the top of the loaf. Spread it with a spatula, if desired.
  • Bake, uncovered for 1 hour.
  • Allow to rest for 5 minutes before slicing and serving. Plan to eat immediately upon slicing so that the melted cheese does not cool too much and firm up.

Time 1h40m

Yield 16

Number Of Ingredients 14

1 cup instant rice
2 pounds ground beef sirloin
1 pound ground beef round
1 egg
1 onion, chopped
1 large green bell pepper, seeded and chopped
1 (4 ounce) can mushrooms, drained
garlic powder to taste
salt and ground black pepper to taste
1 cup grated Parmesan cheese
1 (12 fluid ounce) can spinach, drained
¼ pound thinly sliced deli ham
¼ pound thinly sliced salami
¼ pound thinly sliced Swiss cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a shallow roasting pan. Prepare instant rice according to package directions.
  • In a large bowl, mix together ground sirloin, ground round, egg, chopped onion, green pepper, mushrooms and cooked rice. Season with garlic powder, salt and pepper.
  • On clean counter top, arrange sheets of wax paper approximately 1 1/2 feet long by 1 foot wide. Place meat mixture on wax paper, and flatten into a large square, about 1/2 inch thick (the thinner the better). Sprinkle with more garlic powder, then layer with parmesan, spinach, ham, salami and Swiss cheese. Using the wax paper, roll the meat as tightly as possible while removing the wax paper as you go. Tuck the two open ends into the meatloaf itself, and with hands lightly coated in vegetable oil, shape into a loaf. While lifting with the wax paper, transfer to shallow roasting pan, then slide wax paper out from underneath.
  • Bake in preheated oven for 1 hour and 10 minutes, or until meat is no longer pink and juices run clear. Allow to cool 15 minutes before serving.

CHEESY STUFFED MEATLOAF

Cheesy Stuffed Meatloaf image

This was excellent - my children loved it - here is an added hint - my kids hate mushrooms; I'm not that crazy about them either. So I took my food chopper and chopped them to tiny pieces - the kids ate the meat loaf and never knew there were even mushrooms in it! To me I thought this kind of tasted like a Hot Italian Sausage.

Time 1h25m

Yield 6-8 serving(s)

Number Of Ingredients 13

3 eggs
2 1/4 lbs ground beef
2 cups breadcrumbs
1/2 cup mozzarella cheese
1 tablespoon dried onion flakes
1/2 teaspoon seasoning salt
1/2 teaspoon pepper
1/2 teaspoon garlic salt
1 onion, diced fine
1 green pepper, diced fine
1 (4 ounce) can mushrooms, chopped
2 cups Italian cheese (Mozzarella & Parmesan)
1 (16 ounce) jar pizza sauce (I use Mid's)

Steps:

  • Heat oven to 375 degrees.
  • Line a 15 x 10 x 1" cookie sheet with foil; spray foil with cooking spray.
  • In a large bowl, beat eggs, stir in ground beef, breadcrumbs, cheese, seasonings and ¾ Cup pizza sauce.
  • Mix until well combined.
  • Place meat mixture on foil and shape into a 12x10" rectangle.
  • Sprinkle onions, peppers, mushrooms and cheese over top of meat mixture - this will resemble a pizza.
  • Starting at the 10" side, roll up - jellyroll style.
  • It helps to roll with the foil - then peel it away.
  • In a deep casserole dish, line it with foil, I even went up the sides.
  • Due to the cheese this makes for easy clean up!
  • Place meat loaf seam side down on foil.
  • Bake for 45 minutes.
  • Remove from oven; spoon the remaining pizza sauce over the loaf.
  • Return to oven and bake 20 - 30 minutes or until loaf is thoroughly cooked in center.
  • Let stand a few minutes before slicing.
