Kids love this, and it's even better after sitting for a day. You should have most of the ingredients on hand so no trips to the grocery! You can substitute any cheese for the Romano, as well.

1 pound ground beef
½ cup chopped onion
1 teaspoon dried rosemary
1 teaspoon dried basil
1 (8 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes, drained
2 (15 ounce) cans mixed vegetables, drained
2 pounds red potatoes
½ cup butter
½ cup grated Romano cheese
2 tablespoons minced garlic
1 teaspoon salt
1 teaspoon dried oregano
⅓ cup milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a medium baking dish.

I added a whole lot more than cheese, and now she won't eat plain mashed potatoes!! Boiling the potatoes with the herbs allows the flavors to cook into the potato and blend together into a nice soft herb-y taste without being over powering. You don't have to use the herbs I do, just use what you have in the cupboard that you like! :-)

5 pounds potatoes, peeled and cubed
3 vegetable bouillon cubes
2 bay leaves
3/4 cup heavy whipping cream

2 lbs red potatoes
1/2 cup butter
2 teaspoons garlic, minced
4 tablespoons romano cheese, shredded
1/2 cup whole milk
1/2 cup monterey jack cheese, shredded
1/2 cup cheddar cheese, shredded
2 tablespoons green onions, sliced
2 teaspoons salt
1 teaspoon fresh cracked pepper
1 teaspoon paprika
