2 cups butternut squash chunks
3 cups Brussels sprouts (halved)
1 15 oz. can cannellini beans (rinsed and drained)
1/4 cup fresh pomegranate arils or dried pomegranate seeds
3 Tablespoons dried mulberries
4 cups thinly sliced Lacinato (dinosaur kale)
Olive or avocado oil (or spray)
Dressing
3 Tablespoons champagne vinegar*
1 Tablespoon prepared horseradish
1 clove garlic (minced)
2 teaspoons minced scallions
1 pinch crushed red pepper flakes
1 teaspoon sea salt
⅓ cup extra virgin olive oil

Steps:

  • Roast veggies: Heat oven to 400°F. Place cauliflower, butternut squash and brussels sprouts on a large baking sheet, spray with a little avocado oil spray or drizzle with oil, sprinkle with salt and pepper and toss to combine. Roast for 30-40 minutes or until veggies are until well caramelized and softened with a few golden brown spots. Stir once mid-way through the cooking process and watch closely so the veggies don't burn.

4 small beetroots, trimmed and scrubbed
2 large potatoes, scrubbed and quartered
2 small turnips, peeled and quartered
1/2 bunch dutch baby carrots, trimmed and peeled
6 tiny onions
12 cloves garlic, unpeeled
olive oil
salt and pepper
fresh parsley, chopped,to garnish
1 clove garlic, finely chopped
1 tablespoon horseradish cream
1 teaspoon mustard (I used lemon and dill)
2 teaspoons red wine vinegar
1/4 cup virgin olive oil
salt and pepper

Steps:

  • Wrap the beetroot together in foil (like a package) and place in a 190c oven for 20 minutes.
  • Place the remaining ingredients (except the chopped parsley) in a baking tray, drizzle with olive oil, and season to taste.
  • Place in the oven with the beeroot parcel and cook for 1 hour more, or until tender.
  • Cool the vegetables slightly, then peel the beetroot and tiny onions-quarter the beetroot.
  • Toss all vegetables together gently, then serve on a platter with the dressing drizzled over, scatter with chopped fresh parsley.

4 small golden or red beets (about 2-1/2 inches wide)
8 small red potatoes (about 2-1/2 inches wide)
Kosher salt
1/2 cup sour cream
1/4 cup drained prepared horseradish
1 Tbs. distilled white vinegar; more as needed
1/2 medium tart apple, peeled, cored, and minced
2 Tbs. minced white onion (optional)
Freshly ground black pepper
1 medium bulb fennel, cored and very thinly sliced or shaved with a mandoline or vegetable peeler (about 2-1/2 cups)
1/2 cup fresh flat-leaf parsley leaves
1 Tbs. extra-virgin olive oil
16 thin slices leftover brisket, at room temperature

Steps:

  • Cut the tails and leaves from the beets but leave about 1 inch of the stems attached. Wash well and put them in a 2-quart saucepan with enough cold water to cover. Bring to a boil over high heat, reduce the heat to medium low, and simmer until tender when pierced with a skewer, 30 to 35 minutes. Drain and rinse with cold water to cool. When cool enough to handle, slip off the peels. Slice the beets 1/4 inch thick.
  • While the beets cook, put the potatoes in a 4-quart saucepan with enough water to cover and 1 Tbs. salt. 6 red onions
1 ¼kg large butternut squash , peeled and deseeded
2 tbsp red wine vinegar
1 tbsp soft brown sugar
50ml olive oil
175ml soured cream
3 tbsp creamed horseradish
juice 1 lemon
85g watercress , large stalks removed

Steps:

  • Heat oven to 200C/180C fan/gas 6. Peel the beetroot and cut each into 8 wedges. Cut the onions and butternut squash into roughly the same size. Spread out in a large roasting tin.
