Tips:

  • Use fresh pineapple for the best flavor. Freshly grated pineapple will yield more juice than canned pineapple, resulting in a more flavorful cookie.
  • Be sure to drain the pineapple well before adding it to the cookie dough. If the pineapple is too wet, the cookies will be too soft and may spread too much in the oven.
  • Use a cookie scoop to drop the dough onto the baking sheet. This will help ensure that the cookies are all the same size and shape, and will also help prevent them from spreading too much in the oven.
  • Bake the cookies until they are just set. The edges of the cookies should be golden brown, but the centers should still be slightly soft. If you overbake the cookies, they will be dry and crumbly.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This will help prevent the cookies from breaking.

Conclusion:

These pineapple cookies are a delicious and easy-to-make treat that are perfect for any occasion. They are soft and chewy, with a sweet and tangy pineapple flavor. Whether you are new to baking or are a seasoned pro, these cookies are sure to be a hit with everyone who tries them.
