- Season lamb with salt and pepper. Heat a large straight-sided skillet over medium-high. Add oil, then lamb in a single layer. Cook, flipping once, until browned on both sides, 5 to 7 minutes. Transfer to a plate.

Add wine; cook until mostly evaporated, about 1 minute. Stir in broth. Return lamb and any juices to pan; bring to a simmer. Partially cover, reduce heat to low, and cook until a thermometer inserted in thickest part of lamb (without touching bone) registers 130 degrees, 6 to 8 minutes. Serve over potatoes.
MARINATED, BREADED LAMB CHOPS WITH ROSEMARY AND GARLIC
I found a lot of great recipes out there for grilled lamb chops but only one for breaded, and it didn't have a lot of flavor. So I came up with this easy recipe myself a few years ago. It's bursting with flavor and has become a comfort food staple in our home. Use plain or Italian bread crumbs. We like it with a Caesar salad and garlic mashed potatoes.

Tips for Perfect Rosemary and Garlic Lamb Chops:
- Choose high-quality lamb chops: Look for chops that are evenly marbled with fat and have a bright red color. Avoid chops that are too thin or have a lot of gristle.
- Marinate the lamb chops: Marinating the lamb chops in a mixture of rosemary, garlic, olive oil, and lemon juice will help to tenderize the meat and infuse it with flavor.
- Cook the lamb chops over high heat: This will help to create a nice crust on the outside of the chops while keeping the inside juicy and tender.
- Use a meat thermometer to ensure the lamb chops are cooked to your desired doneness: Lamb chops are best cooked to medium-rare or medium, as overcooking can make them tough and dry.
- Let the lamb chops rest before serving: This will allow the juices to redistribute throughout the meat, resulting in a more flavorful and tender chop.
Conclusion:
Rosemary and garlic lamb chops are a delicious and impressive dish that is perfect for a special occasion meal. By following these tips, you can ensure that your lamb chops turn out perfectly cooked and packed with flavor. Serve the lamb chops with your favorite sides, such as roasted vegetables, mashed potatoes, or grilled asparagus.
