ROSEMARY BREAD

Rosemary Bread image

Provided by Food Network

Yield 2 round loaves

Number Of Ingredients 8

2 packages active dry yeast
1 cup warm water
1 cup milk, room temperature
1/4 cup olive oil
4 tablespoons finely chopped fresh rosemary or 2 tablespoons dried rosemary
1 tablespoon salt
6 cups unbleached all-purpose flour
1 teaspoon kosher salt

Steps:

  • By Hand: Stir the yeast into the water in a large mixing bowl; let stand until creamy, about 10 minutes. Stir in the milk and oil. Combine the rosemary, salt, and flour and stir into the yeast mixture in 3 or 4 additions. Stir until the dough comes together. Knead on a floured surface until velvety, elastic, and smooth, 8 to 10 minutes. It should be somewhat moist and blistered.
  • By Mixer: This recipe is slightly large for the mixer, so that you'll have to stop and push the dough down frequently while the mixer is kneading it. Stir the yeast into the water in a mixer bowl; let stand until creamy, about 10 minutes. Stir in the milk and oil with the paddle. Combine the rosemary, salt, and flour and add to the yeast mixture. Mix until the flour is absorbed, 1 to 2 minutes. Change to the dough hook and knead on medium speed until velvety, elastic, smooth, and somewhat moist, about 3 minutes. Finish kneading briefly by hand on a lightly floured surface.
  • First Rise: Place the dough in an oiled bowl, cover tightly with plastic wrap, and let rise until doubled, about 1 1/2 hours.
  • Shaping and Second Rise: Gently punch the dough down on a lightly floured surface, but don't knead it. Cut the dough in half and shape each half into a round ball. Place the loaves on a lightly floured peel or lightly oiled baking sheet, cover with a towel, and let rise 45 to 55 minutes (but not until truly doubled).
  • Heat oven to 450 degrees F. If you are using a baking stone, turn the oven on 30 minutes before baking and sprinkle the stone with cornmeal just before sliding the loaves onto it. Just before you put the loaves in the oven, slash the top of each loaf in an asterisk with a razor blade and sprinkle half the sea salt into the cuts of each loaf. Bake 10 minutes, spraying 3 times with water. Reduce the heat to 400 degrees F and bake 30 to 35 minutes longer. Cool completely on racks.

ALMOST-FAMOUS ROSEMARY BREAD

Almost-Famous Rosemary Bread image

Provided by Food Network Kitchen

Time 4h

Yield 4 small loaves

Number Of Ingredients 7

1 1/4-ounce packet active dry yeast
2 teaspoons sugar
2 tablespoons extra-virgin olive oil, plus more for brushing and serving
2 1/2 cups all-purpose flour, plus more for dusting
2 tablespoons dried rosemary
1 teaspoon fine salt
1/2 teaspoon kosher salt Freshly ground pepper

Steps:

  • Stir the yeast, sugar and 1/4 cup warm water in a large bowl (or in the bowl of a stand mixer). Let sit until foamy, about 5 minutes.
  • Add 1 tablespoon olive oil, the flour, 1 1/2 tablespoons rosemary, the fine salt and 3/4 cup warm water; stir with a wooden spoon (or with the dough hook if using a mixer) until a dough forms.
  • Turn the dough out onto a lightly floured surface and knead, dusting lightly with flour if necessary, until smooth and elastic, about 10 minutes. (Or knead with the dough hook on medium-high speed, adding a little flour if the dough sticks to the bowl, about 8 minutes.)
  • Brush a large bowl with olive oil. Add the dough, cover with plastic wrap and let stand at room temperature until more than doubled, about 2 hours.
  • Brush 2 baking sheets with olive oil. Generously flour a work surface; turn the dough out onto the flour and divide into 4 pieces. Working with one piece at a time, sprinkle some flour on the dough, then fold the top and bottom portions into the middle. Fold in the sides to make a free-form square. Use a spatula to turn the dough over, then tuck the corners under to form a ball. Place seam-side down on a prepared baking sheet. Repeat with the remaining dough, putting 2 balls on each baking sheet. Let stand, uncovered, until more than doubled, about 2 hours.
  • Preheat the oven to 400 degrees F. Bake the loaves 10 minutes; brush with the remaining 1 tablespoon olive oil and sprinkle with the kosher salt and the remaining 1/2 tablespoon rosemary. Continue baking until golden brown, about 10 more minutes. Transfer to a rack to cool. Serve with olive oil seasoned with pepper.

1/4 cup olive oil, plus oil for the pan

ROSEMARY FRENCH BREAD

This is a wonderful recipe for bread machines. This bread is crusty on the outside and so soft on the inside, it's incredible! One loaf doesn't last the whole day in my house!

Provided by Heather

Categories     White Bread

Time 2h15m

Yield 10

Number Of Ingredients 8

1 (.25 ounce) package active dry yeast
2 cups bread flour
1 teaspoon salt
1 teaspoon white sugar
1 teaspoon butter, softened
17 tablespoons warm water
1 tablespoon dried rosemary, crushed
2 teaspoons minced garlic

Steps:

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select French Bread cycle; press Start.

Nutrition Facts : Calories 9.2 calories, Carbohydrate 1.1 g, Cholesterol 1.1 mg, Fat 0.5 g, Fiber 0.3 g, Protein 0.3 g, SaturatedFat 0.3 g, Sodium 236.8 mg, Sugar 0.4 g

Tips:

  • Use a digital scale to measure ingredients for the most accurate results, especially for the yeast and salt.
  • Warm the milk and water mixture to between 105°F and 115°F (40°C and 46°C) before adding the yeast. This will help to activate the yeast and ensure that it works properly.
  • Knead the dough for at least 5 minutes, or until it is smooth and elastic. This will help to develop the gluten in the dough and give the bread a chewy texture.
  • Let the dough rise in a warm place for about 1 hour, or until it has doubled in size. This will give the yeast time to work and produce carbon dioxide gas, which will cause the dough to rise.
  • Shape the dough into a loaf and place it in a greased loaf pan. Let it rise for another 30 minutes, or until it has almost doubled in size.
  • Bake the bread in a preheated oven at 375°F (190°C) for about 30-35 minutes, or until the top is golden brown and the internal temperature reaches 190°F (88°C).
  • Let the bread cool for at least 10 minutes before slicing and serving.

Conclusion:

Rosemary French bread is a delicious and easy-to-make bread that is perfect for any occasion. It is a great way to use fresh rosemary and can be served with a variety of dishes. Whether you are a beginner or an experienced baker, this recipe is sure to produce a beautiful and tasty loaf of bread.
