Tips:

  • Use creamy grits: Creamy grits are made with a higher ratio of liquid to grits, resulting in a smoother and creamier texture. This is the preferred type of grits for this recipe.
  • Use fresh Rotel: Fresh Rotel, or diced tomatoes and green chilies, will give you the best flavor. If you don't have fresh Rotel, you can use a can of diced tomatoes and green chilies, but be sure to drain them well before adding them to the grits.
  • Add cheese: Cheese is a classic addition to Rotel grits. You can use any type of cheese you like, but cheddar, Monterey Jack, and pepper Jack are all popular choices. Add the cheese towards the end of cooking so that it has a chance to melt.
  • Season to taste: Season the Rotel grits with salt, pepper, and garlic powder to taste. You can also add other seasonings, such as cumin, chili powder, or paprika, to taste.
  • Serve immediately: Rotel grits are best served immediately after they are cooked. They can be served as a side dish or as a main course.

Conclusion:

Rotel grits are a delicious and easy-to-make dish that can be enjoyed for breakfast, lunch, or dinner. They are a great way to use up leftover grits and Rotel, and they are also a great way to add some spice to your meals. With a few simple ingredients and a little bit of time, you can make a pot of Rotel grits that the whole family will love.
