Number Of Ingredients 11

1 pkg (16 oz) Rotini or spiral pasta
4 cups cubed cooked Chicken
1 can (20 oz) Pineapple Tidbits, drained
1 1/2 cups sliced Celery
3/4 cup thinly sliced Green Onions
1 cup seedless Green Grapes
1 cup seedless Red Grapes
1 pkg (6 oz) dried Cranberries or Cranraisens
1 cup Ranch Salad Dressing
3/4 cup Mayonnaise
2 cups Salted Cashews

Steps:

  • Cook pasta. In large bowl, combine chicken, pineapple, celery, onions, grapes and cranberries. Drain pasta, rinse in cold water, and stir into chicken mixture. In small bowl, whisk ranch dressing and mayonnaise. Pour over salad and toss to coat. Cover and refrigerate at least 1 hour. Just before serving, stir in cashews.

Tips:

  • Choose the Right Rotini: Opt for a high-quality rotini pasta that holds its shape well during cooking and doesn't become mushy. Look for rotini with a slightly firm texture that can withstand being tossed with the other ingredients.
  • Cook the Rotini Perfectly: Follow the package instructions for cooking the rotini pasta. Al dente is the ideal texture for rotini chicken salad, with a slight bite to it. Overcooked pasta will become too soft and lose its shape.
  • Use High-Quality Chicken: Select fresh, boneless, skinless chicken breasts or thighs for the salad. Rotisserie chicken is also a convenient option if you're short on time. Ensure the chicken is cooked thoroughly before shredding or dicing it.
  • Prepare the Vegetables: Wash and chop the vegetables, such as celery, carrots, and red onion, into small, bite-sized pieces. This will make them easier to eat and distribute evenly throughout the salad.
  • Make a Flavorful Dressing: The dressing is a crucial component that brings all the flavors together. Use a combination of mayonnaise, Dijon mustard, lemon juice, and herbs, such as dill or parsley, to create a tangy and creamy dressing.
  • Combine the Ingredients: In a large bowl, combine the cooked rotini, shredded chicken, chopped vegetables, and dressing. Toss everything gently to evenly distribute the ingredients and coat the pasta with the dressing.
  • Chill and Serve: Refrigerate the rotini chicken salad for at least 30 minutes before serving. This allows the flavors to meld and develop. Serve the salad chilled, garnished with fresh herbs or a sprinkle of paprika for an extra touch of color.

Conclusion:

Rotini chicken salad is a versatile and flavorful dish that's perfect for lunch, dinner, or potlucks. With its combination of tender rotini, succulent chicken, crunchy vegetables, and a tangy dressing, this salad is sure to be a hit. Experiment with different ingredients and flavors to create your own unique version. Whether you prefer a classic recipe or one with a twist, rotini chicken salad is a delicious and satisfying meal that's easy to make and enjoy.
