Time 3h25m

Yield 6

Number Of Ingredients 20

For the Salad:
2 large Russet potatoes
2 carrots
1 1/2 to 2 parsnips
5 large eggs
1 small onion
2 stalks celery
1 to 2 pickles
2 boneless chicken breasts (cooked and finely diced), or use cooked beef, turkey, ham, hot dogs
1 1/2 cups peas (frozen)
For the Dressing:
1 to 2 cups mayonnaise (homemade is traditional)
1 tablespoon mustard
Salt to taste
Pepper to taste
For the Garnish:
Reserved hard-cooked eggs
Reserved cooked vegetables
Parsley
Olives

Steps:

  • Gather the ingredients.
  • In a large pot of salted water , boil the potatoes in their skins until they are fork-tender, about 20 minutes. Remove them from the water and when cool enough to handle, peel off the skin. Dice finely and reserve.
  • Peel the carrots and parsnips. In a large pot of boiling water, cook them until fork-tender, 8 to 10 minutes. Remove them from the water and when cool enough to handle, dice finely and reserve.
  • Hard boil the eggs. When cool enough to handle, dice finely and set aside.
  • Finely dice the onions, celery, and pickles.
  • In a large bowl, add the diced potatoes, diced cooked chicken or other meat, diced carrots, parsnips, eggs, onion, and celery, reserving some of the vegetables and eggs to use to decorate the salad.
  • Squeeze the diced pickles lightly in a paper towel to remove some of their juice (otherwise the salad will be too watery) and add to the rest of the diced ingredients.
  • Place the frozen peas in a colander and run cold water over them to defrost. Drain completely, patting dry, if necessary, and add to the other diced ingredients in the large bowl.
  • Gather the ingredients.
  • In a medium bowl, whisk together the mayonnaise, mustard, salt, and pepper.
  • Add the dressing to the bowl of vegetables and chicken and toss to completely coat.
  • Transfer the salad to a pretty serving bowl or mound onto a platter. Cover the entire top with a thin layer of the dressing. Use enough so no salad shows through. Decorate the top with the reserved vegetables and hard-cooked eggs, along with olives and parsley.
  • Cover the salad with plastic wrap and place it in the refrigerator to serve chilled. While you could serve it immediately at room temperature, refrigerating it allows the flavors to mix together best.
  • Serve and enjoy.

RUSSIAN POTATO SALAD (SALAT OLIVIER)

Russian Potato Salad (Salat Olivier) image

This very flexible salad is great with meats, on picnics, with all sorts of things. It is fine in the fridge for a few days. Vary the ingredients and seasonings to taste (and convenience). The finer the chopping, the more "gourmet" it is to Russians. The technique here is easy; it just takes a lot of chopping, so give yourself enough time.

1 avocado - peeled, pitted and diced
salt and pepper to taste
½ cup olive oil
chili pepper flakes

Steps:

  • Place shrimp in a large mixing bowl with red and green bell peppers, garlic, onion, cilantro, and avocado. Drizzle with olive oil, and season with salt and pepper. Cover, and refrigerate for at least 1 hour to allow flavors to develop. Serve chilled.

Tips:

  • Choose the right potatoes: Waxy potatoes, such as Yukon Gold or Red Bliss, are best for this salad because they hold their shape well when cooked. Avoid using starchy potatoes, such as Russets, as they will fall apart easily.
  • Cook the potatoes and vegetables properly: The potatoes and vegetables should be cooked until they are tender but not mushy. Overcooked potatoes and vegetables will make the salad soggy.
  • Use high-quality mayonnaise: Mayonnaise is one of the main ingredients in Olivier salad, so it's important to use a high-quality brand. Look for mayonnaise that is made with fresh eggs and oil.
  • Don't skimp on the pickles: Pickles add a nice sour flavor to the salad. Use a variety of pickles, such as dill pickles, sweet pickles, and cornichons, to add depth of flavor.
  • Garnish the salad with fresh herbs: Fresh herbs, such as dill, parsley, and chives, add a pop of color and flavor to the salad. Garnish the salad with fresh herbs just before serving.

Conclusion:

Olivier salad is a delicious and versatile dish that can be served as an appetizer, main course, or side dish. It's a great way to use up leftover meat and vegetables, and it's also a perfect dish for potlucks and picnics. With its creamy mayonnaise dressing, tender potatoes and vegetables, and tangy pickles, Olivier salad is sure to be a hit with everyone who tries it.
