12 ounces penne pasta
1 shallot
1 15 oz can pureed or crushed tomatoes
1/2 cup vodka
2/3 cup chicken broth
2 uncooked salmon fillets, chopped
chopped fresh dill - to taste, a good handful
fresh thyme - to taste, a good handful
2/3 cup heavy cream
salt and pepper to taste (don't be bashful)

Steps:

  • Boil pasta in salted water until al dente. While pasta is cooking, make the sauce. Saute shallot in olive oil in skillet. Add tomatoes (and spinach/kale if desired) and vodka and cook for 2 minutes. Add chicken broth and herbs. Add salmon and gently cook for five minutes. Stir in cream. Add cooked pasta to skillet and coat with sauce. Taste for seasonings, adding salt and pepper as desired. Serve with grated Parmesan and crusty bread.

12 ounces penne pasta, cooked and drained
2 tablespoons olive oil
1 whole shallot (thinly sliced)
4 roma tomatoes (seeded and chopped)
2/3 cup whipping cream
1 pinch ground nutmeg
2 tablespoons fresh dill (chopped,or 1-2 tsp dried dill weed)
1/3 cup vodka
6 ounces smoked salmon (cut into strips)
white pepper
1 sprig fresh dill (optional)

Steps:

  • Heat oil in a wide frying pan over medium-low heat.
  • Add shallot and cook, stirring often, until soft but not brown (about 3 minutes).
  • Stir in chopped tomatoes, cover and simmer for 5 minutes.
  • Add cream, nutmeg, chopped dill and vodka. Increase heat to high and bring to a full boil. Boil for 1 minute.

1 (2-pound) salmon fillet, with skin
1/2 cup kosher salt
3 tablespoons sugar
1/4 cup chopped fresh dill
1/4 cup lemon-flavored vodka
2 tablespoons grated lemon zest
2 tablespoons grated lime zest
2 tablespoons grated orange zest

Steps:

  • Remove any tiny pin bones from the salmon with a pair of needle nose pliers or tweezers. Rinse the salmon under cold running water and pat dry. Place salmon, skin side down, on several large sheets of plastic wrap.
  • In a small mixing bowl, combine salt, sugar, dill, vodka and lemon, lime and orange zests. Spread the sugar/salt/citrus mixture evenly over the fleshy side of the fish, pressing it into the flesh. Wrap the salmon tightly in the plastic wrap and place skin side down n a large baking dish. Place a flat glass or ceramic dish on top of the salmon and weight the dish with several heavy cans or a brick and refrigerate for at least 24 hours and up to 48 hours.
  • Unwrap the salmon and rinse all of the cure off under cold, running water. Pat dry and slice diagonally into paper-thin slices.

1/2 pound cooked ham (better to use Italian cooked ham)
2 tablespoons olive oil
2 tablespoons unsalted butter
1 1/2 large white onions, finely chopped
1.3 quarts (700 ml) tomato sauce (or blended canned peeled Italian tomatoes)
3 tablespoons finely chopped Italian parsley leaves
1 quart heavy cream reduced by half (1/2 quart)
3/4 cup vodka
Salt and pepper
2 pounds penne liscie # 40 (recommended: De Cecco)

Steps:

  • Finely dice the cooked ham and set it aside.
  • Place a heavy bottom sautoir or pan on medium-high flame. Add the olive oil and the butter. When the butter melts and becomes foamy add the chopped onions, let it saute until crispy, and do not let it brown.
  • Add the diced ham, mix it in, lower the flame and let it sweat for about 15 minutes, stir it occasionally.
  • Add the tomato sauce, mix it in, let it simmer for another 20 minutes, then add the parsley, simmer for 3 minutes, add the reduced heavy cream and the vodka, mix it all well and let simmer for 20 minutes
  • Check the consistency, simmer for other 10 minutes if you need to, season and mix in the cooked penne, let it simmer for 2 minutes and serve it HOT!!!
  • Procedure to cook the pasta: In a pasta-cooker or a soup pot, add 6 quarts of salted water and place it over medium-high flame. Bring the water to a boil, add the penne at once, lower the flame to medium, partially cover the pot, and let it cook for about 11 minutes, stirring occasionally, drain it and dress the pasta with your favorite sauce.

1 tablespoon finely chopped onion
1 tablespoon fresh minced garlic
¼ pound smoked salmon, cut into thin strips
1 large tomato, diced

1 ½ pounds dry fettuccine pasta
2 tablespoons black caviar

Steps:

  • Melt butter in a saucepan or wok over medium heat. Add onion and cook until soft and translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add salmon and tomato and season with salt and pepper.

  • Pre-heat grill making sure to coat the grates with a good high temperature cooking spray. Start the water for the pasta adding a pinch of sea salt Prepare the salmon by first removing the skin. Lightly brush with olive oil and then add a bit of salt, pepper, grill seasonings and if desired a dusting of cayenne pepper. Chop garlic cloves and add ~ 1/4 cup olive oil to a sauce pan. Cook with medium heat for a couple of minutes. Add the vodka cream sauce and stir gently. Depending on your tastes, you may thin the sauce a bit using chicken broth or water. Drain the pasta when ready and then scoop the freshly prepared salmon and marinara sauce on top. Sprinkle with parmesan cheese, a few chopped basil leaves and you're all set. Serve with a chilled bottle of Kung Fu Girl Reisling or Muir Wood oaked Chardonnay. :) Tidbits: This recipe is based on a wonderful dish from New York's Little Italy. Adding the diced tomatoes gives the sauce a wonderfully tangy flavor and also serves to thin the sauce a bit.

2 tbsp olive oil
1 banana shallot or ½ onion, finely chopped
3 garlic cloves, crushed
¼ tsp chilli flakes
100g tomato purée
5 tbsp vodka
100ml double cream
200g penne or rigatoni pasta
30g grated parmesan or vegetarian alternative, plus extra to serve
small handful of basil leaves, to serve

Steps:

  • Heat the oil in a large frying pan or casserole dish. Add the shallot and a large pinch of salt and gently fry over a low heat for 10 mins or until softened and translucent. Add the garlic and chilli flakes and cook for 30 seconds. Stir through the tomato purée, cook for 2 mins, then stir through the vodka and cook for 3 mins. Quickly stir through the cream to combine, then remove from the heat.
  • Cook the pasta in salted water following pack instructions. Drain and reserve 150ml cooking water. Add roughly 50ml of the water to the tomato sauce, then tip in the pasta and cheese, tossing everything together over a low heat until well coated and glossy (loosen with a splash more of the cooking water if it's a little dry). Season to taste, then serve with a sprinkling of the extra parmesan, a good grinding of black pepper and the basil leaves scattered over the top.

1pt Heavy cream
1can Tomato paste
1or2pinches Red Pepper Flakes

  • Reduce 1/2 & 1/2, Heavy Cream, Tomato Paste and 1/2 of the Vodka to a thick consistancy. Add Hot pepper and season to taste. Let Cool Boil Pasta(el dente) Cube Salmon & Saute in a little vodka and add reduction. Heat up and toss with pasta. Family size portion garnish with Parmesan cheese and extra red peppers. For formal presentation garnish with fresh basil leaf.
