SALMON RICE BAKE

Salmon Rice Bake image

This is from the Company's Coming Select Series Beans & Rice cookbook. I didn't have instant rice so I used the same amount of regular white rice, increased the chicken broth by 1 cup, and boiled the rice with the veggies. I think I probably should have used a little less rice (or another tin of mushroom soup!) because it was a little on the dry-ish and it filled my 3 qt casserole -- the recipe just calls for a 2 qt. I also substituted chopped red pepper for the carrots and added it with the broccoli. But all modification aside, it was still a very tasty casserole and definitely a do-over in THIS house -- especially when topped with a bit of melted cheddar!!

Provided by Cassie Best

Categories     Dinner

Time 30m

Number Of Ingredients 20

150g sushi rice
pinch of caster sugar
1 tbsp rice vinegar
120g frozen edamame
1 large carrot
handful of radishes
¼ cucumber
2 cooked skinless salmon fillets
1-2 tbsp soy sauce
1 tsp toasted sesame seeds
few pieces of sushi ginger, optional
scales
measuring jug
medium saucepan with a lid
measuring spoons
wooden spoon
small saucepan
vegetable peeler
chopping board
sharp knife

Steps:

  • Tip the sushi rice into a medium saucepan, cover with 200ml water and add a pinch of salt. Put the pan on the hob and turn the heat to high. Wait for the water to boil, then reduce the heat to very low, cover the pan with a lid and leave to gently cook for 15 mins.
  • After 15 mins turn off the heat, fluff up the rice with a fork, then return the lid to the pan and leave for another 5 mins, the rice will continue to cook. After 5 mins, check the rice is cooked - it should have absorbed all the water and be soft but not mushy. Stir the sugar and vinegar through the rice, cover with the lid again and leave to keep warm while you prepare the other ingredients.
  • Fill a small pan halfway with water, put it on the hob and bring the water to a gentle boil. Add the edamame beans, cook for 3 mins, then carefully drain.
  • Peel the carrot and discard the outer skin, then keep peeling the flesh to create lots of carrot ribbons.
  • Thinly slice the radishes. Cut the cucumber into batons, then thinly slice lengthways.
  • With your hands, break the salmon into small pieces - look out for any bones and throw these away.
  • Divide the warm rice between two bowls and arrange the other ingredients on top, then drizzle with the soy sauce and sesame seeds, and add a few pieces of sushi ginger, if using.

3 tablespoons finely chopped fresh mint leaves
1 tablespoon soy sauce
3 tablespoons rice vinegar (not seasoned)
four 6-ounce pieces salmon fillet
olive oil for brushing salmon
1/4 cup roasted peanuts

Steps:

  • Make rice:
  • Preheat oven to 400°F.

  • Make sauce:
  • In a heavy saucepan sauté gingerroot and garlic in oil over moderately high heat, stirring, until golden. Add coriander, curry powder, curry paste, paprika, and cumin and sauté, stirring, 1 minute, or until fragrant. Whisk in coconut milk, tomato purée, soy sauce, and brown sugar and bring just to a boil. Remove pan from heat and keep warm.
  • Prepare vegetables:
  • In a bowl toss together all vegetable ingredients.
  • Prepare grill.
  • Brush salmon with oil and sprinkle with salt and pepper to taste. Grill salmon on an oiled rack set 5 to 6 inches over glowing coals until just cooked through, about 5 minutes on each side.
  • Put each in center of 4 plates and arrange salmon on top. Top salmon with vegetables and spoon sauce around it. Sprinkle vegetables with peanuts.

Tips:

  • Choose High-Quality Salmon: Opt for wild-caught salmon for its superior flavor and nutritional value.
  • Prep the Salmon Properly: Remove the skin and bones from the salmon fillet to ensure an even cook.
  • Season the Salmon Generously: Use a flavorful blend of herbs, spices, and citrus to enhance the salmon's taste.
  • Cook the Salmon to Perfection: Bake the salmon at a high temperature for a short time to maintain its moist and flaky texture.
  • Prepare the Basmati Rice Perfectly: Rinse the rice thoroughly before cooking to remove excess starch and prevent clumping.
  • Use a Flavorful Broth: Enhance the taste of the rice by using a flavorful broth instead of water.
  • Add Vegetables for Extra Flavor and Nutrition: Incorporate a variety of colorful vegetables into the rice for added flavor and nutritional value.
  • Bake the Casserole Until Golden Brown: Bake the casserole until the top is golden brown and the salmon is flaky when tested with a fork.
  • Let the Casserole Rest Before Serving: Allow the casserole to rest for a few minutes before serving to allow the flavors to meld and the rice to absorb the juices.

The Salmon Basmati Rice Bake is a delectable and wholesome dish that combines the rich flavors of salmon, aromatic basmati rice, and a medley of vegetables.
