SALMON MAC AND CHEESE
This is a salmon version of a tuna casserole. You can use tuna in this as well. I made this up in college when I needed to make something that would use up stuff I had in the kitchen.

J-LYN'S AWESOME SALMON CASSEROLE
I improvised this salmon casserole with items I had on hand in my pantry. I've never been big on casseroles (if you've had my mom's cooking, you'd understand why), but they are definitely an easy way to use up items that would otherwise be sitting in the pantry forever. This recipe is simple enough; feel free to add or supplement as you see fit!

Tips:
- Use fresh or frozen salmon: Fresh salmon is best, but frozen salmon works well too. If using frozen salmon, thaw it completely before cooking.
- Cook the salmon properly: Salmon is a delicate fish, so it's important to cook it carefully. Overcooked salmon will be dry and tough. The best way to cook salmon is to bake it in the oven or pan-fry it over medium heat.
- Use a variety of vegetables: This recipe calls for broccoli and carrots, but you can use any vegetables you like. Some other good options include zucchini, bell peppers, and spinach.
- Don't overcook the macaroni: The macaroni should be cooked al dente, which means it should still have a slight bite to it. Overcooked macaroni will be mushy.
- Use a flavorful cheese: The cheese is what really brings this dish together. Use a cheese that has a strong flavor, such as cheddar or Parmesan.
- Serve immediately: This dish is best served immediately after it's made. The macaroni will start to absorb the sauce and become mushy if it sits for too long.
Conclusion:
Salmon macaroni casserole is a delicious and easy-to-make dish that's perfect for a weeknight meal. It's also a great way to use up leftover salmon. With its creamy sauce, tender macaroni, and flavorful salmon, this casserole is sure to be a hit with your family and friends.
