  • Halve cucumber crosswise and thinly julienne lengthwise, preferably with a mandoline or other manual slicer, working around core. Discard core.

1 tablespoon white wine vinegar
1 teaspoon salt
1 small onion, grated
1 cup sour cream
3 tablespoons lemon juice
1 tablespoon sugar
3 tablespoons snipped fresh dill, plus extra for garnish

4 6- to 8-ounces salmon fillets, 1/2-inch thick
1 quart water
2 teaspoons salt
3 tablespoons wine vinegar

Steps:

  • Grate cucumber and toss with vinegar and salt in a colander. Set aside for 30 minutes to drain. With your hands squeeze juices from cucumber. Combine cucumber in a mixing bowl with remaining sauce ingredients and season to taste with salt and pepper.
  • Skin salmon fillets and remove bones. Fill a wide saucepan with water, about 3 inches deep. For one quart of water, add 2 teaspoons salt and 3 tablespoons vinegar; adjust proportions accordingly for more or less water. Bring to a boil. Carefully add salmon to pan and adjust heat until water is just below simmering -- it should shiver, and not quite bubble. Cook until fish has turned from translucent to opaque and feels springy to touch, about 8 minutes.

3 medium cucumbers (8 ounces each)
1 tablespoon kosher salt, plus more to season
1/2 medium red onion, peeled and sliced very thinly
1 red pepper, seed and ribs removed, thinly sliced
2 1/2 tablespoons sugar
1/2 cup rice wine vinegar
1/2 cup roughly chopped fresh dill
1 1/2 cups clabber cream or creme fraiche
3 to 4 tablespoons freshly ground horseradish (or prepared, spicy horseradish, drained)
3 tablespoons Dijon mustard
Freshly ground pepper
4 (7-ounce) salmon fillets, with skin
1 tablespoon olive oil
2 teaspoons butter, room temperature

Steps:

  • Salad: Peel the cucumbers, trim the ends, and cut in half lengthwise. Remove the seeds by scooping out the centers of the cucumbers with a teaspoon. Slice cucumbers crosswise into 1/4-inch pieces, place them into a colander fitted over a bowl, and toss with salt. Weigh the cucumbers down lightly with another bowl fitted inside the colander, and place cucumbers in the refrigerator. Drain for 1 to 2 hours. Transfer cucumbers to a mixing bowl and toss with the onion and red pepper. In a separate small bowl, dissolve the sugar in the vinegar, pour vinegar over the top of the cucumbers, and toss in the dill. Marinate in the refrigerator for at least 1 hour before serving.
  • Sauce: Whip the cream until thick and add the horseradish and mustard. Season with salt and pepper, to taste, whisking. Taste and adjust seasoning if necessary. Set aside until serving.
  • Salmon: Preheat oven to 375 degrees F. Place a large, oven-proof saute pan over medium-high heat. Add olive oil and swirl to coat the bottom. Season the fillets with salt and pepper, brush each fillet generously with butter onto the skin side only. Place the fillet into the hot pan, butter side down, and brown for 2 minutes over high heat. Pop the pan into the oven for 3 minutes. Remove and serve.
  • Plating: Mound one quarter of the cucumber salad into the center of each plate, and top with one salmon fillet, skin side-up. Surround with one quarter of sauce, and serve.

1/2 pound carrots, peeled, sliced, if desired
1 small bunch parsley
2 cups dry white wine
Water
Salt
Black peppercorns
4 (6 to 8-ounce) center cut, skinless, salmon fillets

Steps:

  • Combine all poaching liquid ingredients in a medium saucepan. Bring the poaching liquid to a very low simmer and cook 30 minutes. Skim the top as needed to remove any foam from the surface. Lay some cheesecloth over the top of the poaching liquid, making a bed for the fillets. Submerge salmon in poaching liquid and cook for 8 to 10 minutes.
  • 1 English cucumber, unpeeled, roughly chopped
  • Fronds from 1 bunch dill (about 1 cup)
  • 1/2 small red onion
  • 2 large lemons, juiced
  • 1/3 cup mayonnaise
  • 2 tablespoons extra-virgin olive oil
  • 1/3 cup yogurt
  • Salt and freshly ground black pepper
  • Combine first four ingredients in a blender and puree. Gradually blend in mayonnaise, oil and yogurt and then season, to taste, with salt and pepper.

1 (16 ounce) can canned salmon, thoroughly drained and flaked (reserve the brine)
1/4 cup butter, at room temperature
1/2 teaspoon salt
3 tablespoons lemon juice
2 tablespoons onions, finely grated
2 garlic cloves, finely grated
1 teaspoon dried parsley
1 teaspoon fresh dill, finely chopped
1 cup soft breadcrumbs
2/3 cup milk
2 eggs, beaten
1/2 tablespoon parmesan cheese
1/4 cup butter
1/4 cup flour
2 cups milk
1 1/2 cups grated cucumbers
1 teaspoon paprika (mild or hot, depending on your preference)

Steps:

  • Preheat the oven at 325ºF.
  • Combine the salmon with the butter.
  • Add salt (to taste), lemon juice, grated onion, grated garlic, parsley and dill.
  • Soak the breadcrumbs in milk.
  • Add the beaten eggs.
  • Add the Parmesan.
  • Stir the breadcrumb mixture into the salmon mixture.
  • If the mixture seems too dry at this point, add a little of the reserved brine (about a teaspoon at a time) or if you have more lemon juice available, a little more lemon juice (a teaspoon at a time).
  • Spoon the mixture into a lightly greased 9x5x3-inch loaf pan.
  • Bake at 325°F for 45 minutes, or until cooked.
  • THE SAUCE: grate the cucumber.
  • Melt the butter in a pan over a medium-low heat.
  • Blend in the flour.
  • Gradually add the milk, stirring constantly, until the sauce is thickened and bubbly.
  • Add the grated cucumber and paprika.
  • Stir to blend.
  • Serve with the salmon loaf and your favourite salad or vegetable side dishes.
  • Chef's notes: This loaf can be made with red or pink salmon. Red is tastier. For the health-conscious, use the salt-reduced or salt-free varieties. And omit - or reduce - the salt in the recipe. I made this again recently, after MarieAlice's review - I hadn't made it for years and years. And not being very good at following recipes exactly whether they be mine or someone else's, I just HAD TO make some changes. I added several grated baby carrots (they are just so sweet and flavoursome at the moment) and several tablespoons of wheat germ. Then in order to retain the moistness, I added some extra lemon juice. And I discovered also that this is one of those recipes that is tastier cold!

12 oz. (1-1/2 pkg.) PHILADELPHIA Cream Cheese, softened
1 cup mayonnaise
10 oz. pre-cooked salmon
1/2 cup finely diced onions
1/2 cup finely diced celery hearts
1/2 cup chopped pimentos, drained and dried
1/2 cup frozen peas
2 Tbsp. chopped fresh parsley
2 Tbsp. chopped fresh dill
zest of 1 lemon
kosher salt and cracked black pepper
1 sheet (1/2 of pkg.) frozen puff pastry, thawed
1 egg, beaten
1 cup grated cucumbers, patted dry

Steps:

  • Preheat oven to 400°F.
  • In a small bowl, mix together 6 oz. of cream cheese and 1/2 cup of mayonnaise until smooth. Set aside.
  • In a large bowl, mix together salmon, onions, celery, pimentos, peas, parsley, dill and lemon zest. Mix with the cream cheese mixture. Taste and season with salt and pepper.
  • Spray a sheet pan with nonstick cooking spray. Lay 1 sheet of puff pastry on pan.
  • Mound the salmon filling evenly across from one side to the other side, about 2 inches from the bottom end. Wrap the pastry over the top. Pinch the bottom and top pastry, rolling to seal it closed. Brush pastry with beaten egg and refrigerate for 15 minutes before baking.
  • Bake for 25 minutes. Remove from oven and let rest 10 minutes before serving.
  • While the pastry is baking, make the sauce. With a fork or hand mixer, blend 6 oz. of cream cheese with 1/2 cup mayonnaise until combined. Mix in the cucumber.

1 tablespoon fresh dill, chopped

  • Lay some plastic wrap on your work surface and arrange the salmon on top in a 12 x 8 inch rectangle.
  • Mix cheese with dill and spread over salmon.
  • Press row of capers into cheese along one long edge.

4 (175 g) salmon steaks, 3 cm thick
to taste salt
to taste black pepper, freshly ground
4 teaspoons lemon juice
1 large cucumber, peeled and deseeded
7 g butter
120 ml dry white wine
5 tablespoons sour cream
3 tablespoons fresh dill, chopped

Steps:

  • Place the salmon on a large piece of lightly buttered foil on a baking sheet. Season lightly and sprinkle with lemon juice.
  • Wrap loosely and bake at 170 C / 325 F / Gas 3 for 20-25 minutes until cooked. Leave to cool in the foil.
  • Dice the cucumber very finely. Cook in melted butter for 2 minutes until translucent.
  • Add wine to the pan, bring to the boil and simmer until all the liquid has evaporated - about 10 minutes - and the cucumber is 'dry'.
  • Remove from the heat, stir in the cream and dill and check seasoning.
  • Serve immediately with the fish.

1/3 cup dry white wine
1/3 cup orange juice
1/3 cup soy sauce
6 6-ounce salmon fillets with skin
