SALMON WITH FRESH FRUIT SALSA - DIABETIC FRIENDLY

Salmon With Fresh Fruit Salsa - Diabetic Friendly image

From my daily diabetic recipe email and "The Complete Idiot's Guide to Terrific Diabetic Meals".

Provided by kitty.rock

Categories     Fruit

Time 55m

Yield 4 filets with 1/2 cup salsa, 4 serving(s)

Number Of Ingredients 8

1 lb salmon fillet, cut into 4 portions
1/2 teaspoon no-salt chili powder
1 cup diced fresh pineapple
1 cup diced fresh cantaloupe
1/2 cup diced red bell pepper
1/4 cup seasoned rice wine vinegar
2 tablespoons finely chopped fresh cilantro
1/4 teaspoon crushed red pepper flakes

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9x9-inch baking pan with olive oil cooking spray.
  • Place salmon fillets in the pan in a single layer and sprinkle with chili powder.
  • Spray fillets lightly with cooking spray and bake, uncovered, for 35 minutes or the thickest part of fillet is translucent.
  • Meanwhile, mix pineapple, cantaloupe, red bell pepper, vinegar, cilantro, and red pepper flakes together in a small bowl. Set aside.
  • Top each fillet with 1/2 cup salsa and serve.

Tips:

  • Choose the right salmon. Fresh, wild-caught salmon is the best choice for this recipe. Look for salmon that is firm and has a bright color.
  • Make sure the salmon is cooked properly. Salmon should be cooked to an internal temperature of 145 degrees Fahrenheit. This will ensure that it is cooked through but still moist and flaky.
  • Use fresh fruit for the salsa. Fresh fruit will give the salsa the best flavor. If you are using frozen fruit, thaw it completely before using.
  • Add some heat to the salsa. If you like spicy food, you can add a jalapeño pepper or some cayenne pepper to the salsa.
  • Serve the salmon with the salsa immediately. The salsa is best when it is fresh. If you are making the salsa ahead of time, store it in the refrigerator and bring it to room temperature before serving.

Conclusion:

Salmon with fruit salsa is a delicious and healthy meal that is perfect for any occasion. The salmon is flaky and moist, while the salsa is refreshing and flavorful. This dish is sure to please everyone at your table.
