Yield Serves 12

Number Of Ingredients 9

4 leeks, trimmed of dark-green stem, sliced in half lengthwise
4 oranges
1 whole salmon, about 8 pounds, head and tail on, scaled, cleaned
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 red onion, cut into 1/8-inch-thick rounds
6 sprigs fresh cilantro
1 tablespoon unsalted butter
1 cup dry white wine

Steps:

  • Heat oven to 400 degrees. Strew bottom of 12-by-18-inch jelly-roll pan or 12-by-16-inch half-sheet pan with leeks; set aside. With a sharp knife, cut away the peel, pith, and outer membranes from 2 oranges; slice orange flesh into 1/4-inch-thick rounds; set aside.
  • Rinse salmon under cold water, making sure cavity of fish is completely clean. Pat fish dry with paper towel. Cut 3 shallow slits through salmon's skin, about 3 inches apart, on each side of fish. Season salmon cavity with salt and pepper.
  • Stuff cavity with cilantro sprigs, reserved orange rounds, and onion rounds. Drape a large piece of cheesecloth over leeks in bottom of roasting pan. Place salmon on top of cheesecloth.
  • Squeeze juice from remaining 2 oranges into small saucepan; place pan over medium-high heat, and bring juice to a boil. Add butter, and stir until melted; remove pan from heat. Brush salmon with orange-juice mixture. Place roasting pan in oven, and roast salmon, basting every 10 minutes with orange-juice mixture, until skin is crispy and dark golden brown and meat is pink and firm to the touch, about 1 hour. If head or tail of fish become too dark, gently fold aluminum foil over them. Remove pan from oven; pour wine into pan to help loosen salmon. Using cheesecloth to help lift fish, carefully transfer to serving platter. Gently remove cheesecloth from under fish, and serve.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 14

3/4 cup freshly squeezed orange juice
1 strip orange zest, 1/2-inch
1/4 cup shallot, julienned
1/2 bay leaf
1 teaspoon whole black peppercorn
1 garlic clove, smashed
1 sprig fresh thyme
1/3 cup dry white wine
1/2 cup heavy cream
8 ounces cold unsalted butter, cut into small pieces (2 sticks)
salt
fresh ground black pepper
24 ounces salmon fillets, skin on, 6 ounces each
2 tablespoons canola oil or 2 tablespoons vegetable oil

Steps:

  • Combine the orange juice, strip of orange zest, shallots, bay leaf, peppercorns, garlic, thyme and wine in a saucepan, and bring to a boil. Reduce the heat to a simmer and cook until the liquid has reduced by three-fourths; about 8 minutes.
  • Add the heavy cream and cook until the liquid has reduced by half; about 4 minutes longer.
  • Whisk in the cold butter little by little, whisking until the sauce is smooth and thick and all the butter is incorporated; 3 to 4 minutes. Do not allow the sauce to boil.
  • Strain the sauce through a fine-mesh sieve into another saucepan, pressing on the solids to extract all the liquid; discard the solids.
  • Season the sauce with salt and pepper to taste, and keep warm until ready to serve. (Do not allow the sauce to boil or it will separate.).
  • Season the salmon on both sides with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  • Heat the canola oil in a large skillet over medium-high heat. Add the salmon, skin-side down, and cook until lightly browned and crisp; 3 to 4 minutes. Flip the salmon over and cook until the fish is just cooked through; about 2 more minutes.
  • Serve the salmon, skin side up, immediately. Spoon the orange butter sauce around the fillets.

ORANGE ROASTED SALMON

Orange Roasted Salmon image

I like to make this for company since you can get it ready ahead of time up until the final baking step. It looks both pretty and impressive, and the orange flavor is more subtle than you'd expect. This is a healthy and elegant meal (not to mention delicious) when served with a leafy salad, brown rice, and asparagus.

Number Of Ingredients 10

2 oranges, sliced into rounds
1 onion, thinly sliced
1 ½ tablespoons olive oil
5 (6 ounce) salmon fillets
1 tablespoon lemon pepper
1 ½ teaspoons garlic powder
1 tablespoon dried parsley
½ cup orange juice
1 ½ tablespoons lemon juice
1 tablespoon honey

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a small bowl or cup, stir together the lemon pepper, garlic powder, and dried parsley. Place the slices from one of the oranges in a single layer in the bottom of a 9x13 inch baking dish. Place a layer of onion slices over the orange. Drizzle with a little bit of olive oil, and sprinkle with half of the herb mixture.

BROILED SALMON WITH CHILE, ORANGE AND MINT

Broiled Salmon With Chile, Orange and Mint image

A butter-flavored sauce with vibrant citrus and herbs brings an easy elegance to your weeknight salmon. Red-pepper flakes give off a subtle heat - feel free to add more if you like - while orange zest and fresh mint cut the richness of this superbly fatty fish. A crisp green salad or sautéed asparagus would work well alongside, as would a glass of rosé.

Time 15m

Yield 4 servings

Number Of Ingredients 7

4 tablespoons unsalted butter
1/2 teaspoon red-pepper flakes
1 1/2 teaspoons orange zest
3 tablespoons finely chopped mint
Kosher salt and black pepper
4 (5- to 6-ounce) salmon fillets
Flaky salt, for serving (optional)

Steps:

  • Turn on the broiler and position the oven rack to sit about 6 inches below it.
  • In a small saucepan, melt butter over medium-low heat. Add red-pepper flakes, and cook for about 1 minute. Remove butter from heat, and stir in orange zest and 2 tablespoons mint. Set aside.
  • Season salmon well with salt and pepper and place skin-side down on a rimmed baking sheet lined with foil. Spoon butter mixture evenly over the top of each fillet.
  • Broil salmon for 4 to 6 minutes until the skin becomes opaque and the fish appears flaky. It should be medium-rare in the thickest part of the fillet. If you prefer your salmon a bit more cooked, leave it in for another minute or so, moving it to a lower rack if the tops get too dark. Serve, and scatter with remaining mint. Season with flaky salt, if desired.

Tips:

  • Mise en place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and avoid scrambling.
  • Choose the right salmon: Look for wild-caught salmon if possible, as it is generally considered to be more sustainable and flavorful than farm-raised salmon.
  • Cook the salmon gently: Salmon is a delicate fish, so it's important to cook it gently to avoid overcooking it. The best way to do this is to cook it over medium heat or in a preheated oven.
  • Use fresh herbs: Fresh herbs can really brighten up the flavor of salmon. Some good choices include dill, parsley, and thyme.
  • Make sure the sauce is flavorful: The sauce is an important part of this dish, so make sure it's flavorful and well-balanced. Use a good quality white wine and butter, and add some fresh herbs and spices to taste.
  • Serve the salmon immediately: Salmon is best served hot, so serve it immediately after it's cooked.

Conclusion:

Salmon with orange butter sauce is a delicious and elegant dish that is perfect for a special occasion. It is easy to make and can be tailored to your own taste preferences. Serve it with a side of roasted vegetables or rice for a complete meal.
