1/2 cup whole fat sour cream
1 1/2 teaspoons whole grain mustard
1/3 cup grated parmesan cheese

  • Heat oven to 425 degrees F. Lightly oil a rimmed baking sheet or baking dish. (Instead of oiling the pan, you could also line with parchment paper).

1 whole salmon (5 to 8 pounds), preferably sockeye, scaled, cleaned, and rinsed well, or 1 whole skin-on side of salmon (2 1/2 to 3 pounds; serves 5 to 6)
1 lemon, halved lengthwise and thinly sliced
1 bunch fresh thyme
1 bunch fresh oregano
1 bunch fresh chives
Extra-virgin olive oil, for rubbing

4 scallions, trimmed
1 cup sour cream
1/3 cup prepared horseradish
2 tablespoons fresh lemon juice (from 2 lemons)
