One 16 oz can refried beans ((I used homemade, see notes))
1 medium onion
1 medium red bell pepper
1/4 cup corn
2/3 tsp ground cumin
1/2 tsp paprika
1/2 tsp garlic powder
A pinch of cayenne
1 jalapeño pepper (or more to taste)
7-8 oz vegan cheese ((I used homemade, see notes))
Salt and pepper (to taste)

Steps:

  • First, prepare the dough using my Homemade Gluten-Free Pizza Crust Recipe (click for the recipe) or use a store-bought pizza crust. Check the recipe notes below for the tortilla version.
  • Preheat oven to 400 degrees Fahrenheit (205 degrees Celsius) and line a large baking sheet with greased parchment paper.
  • Transfer the Refried Beans to a bowl and add a splash of water to make the mixture spreadable. Add all spices (cumin, paprika, garlic powder, cayenne pepper).
  • Chop/dice/slice the onion, pepper, and jalapeño.
  • Transfer the pizza crust onto the lined baking sheet and add a thick layer of refried beans.
  • Put the veggies, jalapeño, and corn on top.

one 1.25-ounce packet fajita seasoning mix
one 8-ounce bag shredded cheese, divided (Mexican blend, Pepper Jack blend, etc.)
8 ounces brick-style cream cheese, very well softened to room temp
8 ounces salsa

Steps:

  • Preheat oven to 375F. Spray a 9-inch pie dish (or similar-sized oven-safe baking dish) with cooking spray.
  • Place tortilla chips in dish so they cover the majority of the bottom, slightly overlapping. This prevents soup from seeping through.
  • Add the soup and lightly spread it evenly over the chips with a spatula or knife.
  • Evenly sprinkle the fajita mix over the top.
  • Evenly sprinkle not quite half the cheese over the top (I used about 40% of the bag); set aside remainder.
  • Add the cream cheese in about 1/4 cup blobs and with a spatula or knife, do your best to carefully distribute it evenly over the pan without disturbing the other layers. Some small bald patches are okay because it bakes together. Tip - the softer your cream cheese is, the easier this step is.
  • Evenly pour the salsa over the top, spreading it lightly with a spatula or knife if necessary.
  • Evenly sprinkle reserved cheese over the top.
  • Bake for about 30 to 40 minutes, or until top is golden browned, bubbly, and dip is done to your liking. Allow dip to cool momentarily before serving.

1 pound ground beef or turkey
2 teaspoons chili powder
1/2 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground cumin
1 teaspoon dried oregano
3/4 teaspoon kosher salt
cayenne pepper to taste (optional)
8 corn tortillas
1 cup refried beans
1 cup red salsa
1 cup green salsa ((or use all one kind of salsa if you prefer))
3 cups Mexican blend shredded cheese
1 ripe avocado (sliced)
1 small can sliced black olives
4 Roma tomatoes (diced)
4 green onions (sliced thin)

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil, and spray with cooking spray. (Seriously, or else your pizzas might stick.)
  • Heat a skillet over medium high heat and spray it with cooking spray. Add ground meat and spices, and brown and crumble until cooked through. Drain meat if needed/desired.
  • Spread 1/4 cup refried beans evenly over four tortillas, and place them on the prepared baking sheet. Evenly spread meat over beans (you will probably have some leftover). Sprinkle 1/4 cup cheese over the meat, and drizzle with about two tablespoons of red salsa.
  • Place another tortilla on top, and spread 2 tablespoons of green salsa evenly over that one. Sprinkle 1/4 cup cheese over the salsa, and arrange avocado, olives, tomatoes, and green onions over the cheese. Sprinkle 1/4 cup cheese over the top of each pizza.
  • Bake in preheated oven for 8-12 minutes, until cheese is melted and bubbly. Carefully remove each pizza with a large spatula and serve.

  • INGREDIENTS: 4 corn, whole-grain or whole wheat tortillas (6 inches) 1 can (15 to 16 ounces) black beans 1/4 teaspoon garlic powder 1/4 teaspoon chili powder 1/16 heaping teaspoon cayenne pepper 7 tablespoons prepared salsa (mild, medium or hot), 2/3 cup shredded cheddar-style or jalapeño vegan cheese 2 cups firmly packed shredded romaine lettuce
  • INSTRUCTIONS: Preheat the oven to 350 degrees F. Line a large, rimmed baking sheet large enough to accommodate 4, 6-inch tortillas (or two medium-sized sheets) with unbleached parchment paper. Arrange the tortillas in a single layer on the prepared baking sheet(s).
  • Put the black beans, garlic powder, chili powder, cayenne pepper and 3 tablespoons salsa into a medium-sized bowl and mash using a potato masher or large fork until combined.
