1 tablespoon garlic flavored olive oil
3 green bell pepper, seeded and cut into strips

2 tablespoons Italian seasoning
6 cloves garlic, chopped
1 large onion, cut into wedges

Steps:

  • Slice each sausage link into 5 pieces. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the sausage, and cook until browned, turning as needed.
  • Drain excess grease, then add the green, red and yellow peppers, tomatoes, and Italian seasoning. Drizzle the remaining olive oil over all, and reduce the heat to medium-low. Cover, and let simmer for 15 minutes.

1 bell pepper ((sliced))
1 onion ((sliced))
2 tsp canola oil
1/2 cup water or stock
Red pepper flakes ((optional))

Steps:

  • Heat a heavy 12" cast iron skillet with a drizzle of canola oil over medium-high heat until it just starts to smoke.
  • With a fork, poke a few holes on each side of the sausage to keep them from bursting while they cook.
  • Place the sausage in the hot skillet, then place the sliced peppers and onions around them.
  • Stir the peppers and onions to spread them around and coat with oil.
  • Cook the sausage for about 4 minutes per side, or until they are nicely browned.
  • Carefully pour 1/2 cup water or stock in the skillet, then immediately place a lid over the skillet and reduce the heat to medium-low.
  • Continue to cook covered for about 10 more minutes, or until the internal temperature of the sausage reaches 160° F / 71° C.

1 pound smoked sausage (sliced)
1 tablespoon olive oil
1 medium onion (sliced)
3 bell peppers (sliced)
2 cloves garlic (minced)
Salt & pepper (to taste)

Steps:

  • Prep your ingredients. I like to serve this recipe with egg noodles, but you can serve it with whatever you decide. If doing egg noodles/pasta, I suggest starting to boil the water as you begin cooking the sausages.
  • Add the olive oil to a skillet over medium-high heat. Sear the sausage pieces until they're browned/crispy on all sides (about 8-10 minutes), then remove them from the pan and set aside.
  • Add the onion to the skillet and sauté it for 2-3 minutes (add more oil to the pan if it seems too dry), and then add in the peppers and continue cooking until they're tender-crisp. I like to get a little char on mine, so I cook them for a bit longer and ensure the pan stays HOT.
  • When everything is looking to be about done, stir in the garlic and cook for about a minute or so.
  • Add the sausages back and give it a good stir. Serve over drained egg noodles or whatever you're serving it with. Season with salt & pepper as needed.

3 tablespoons extra-virgin olive oil
1 1/2 pounds sausages (spicy Italian, mild Italian, plant-based, etc.)
2 orange bell peppers, seeded and sliced
2 red bell peppers, seeded and sliced
2 yellow bell peppers, seeded and sliced
2 white onions, halved and sliced
Kosher salt and freshly ground black pepper
4 cloves garlic, sliced
1 tablespoon apple cider vinegar
2 tablespoons chopped fresh basil

Steps:

  • Heat a large braiser or high-sided skillet over medium-high heat. Add 1 tablespoon olive oil and swirl to coat the skillet. Once the oil is shimmering, add the sausages and brown on all sides until browned but not cooked through, 5 to 7 minutes. Remove them to a plate and let cool until cool enough to handle, then slice them into 1 1/2-inch pieces. Set aside.
  • Turn the heat down to medium-low and add the remaining 2 tablespoons olive oil to the skillet. Add the peppers and onions and season with 1 teaspoon salt and 1/4 teaspoon pepper. Cook the peppers and onions, stirring occasionally, until they begin to soften, about 5 minutes. Add the garlic and stir to incorporate. Continue cooking the vegetables over low heat until they're very soft, beginning to caramelize and have some spots of browning, about 40 minutes. If the vegetables start to look like they're getting too browned too quickly, add a splash of water to deglaze.
  • Add the apple cider vinegar and the sausages to the skillet and stir to incorporate. Continue cooking until the sausages are cooked through, 10 to 15 minutes. Turn the heat off.
  • Garnish with the basil and serve immediately.

1 (6 ounce) can tomato paste

  • Heat olive oil in a large heavy skillet over medium high heat.
