SALTED FISH FRIED RICE

Salted Fish Fried Rice image

I order this dish all the time at Chinese restaurants, so this is my little attempt to re-create it at home. I find that it's usually not the fish that tastes super salty, but instead the egg. This recipe was taken from an online newspaper.

2 teaspoons soy sauce
2 tablespoons chopped cilantro

  • Add sliced greens, fish sauce, and soy sauce.
  • Stir to combine and cook until rice is heated through, 2 to 3 minutes.
  • Stir in cilantro and serve.

Tips:

  • Use day-old rice: Day-old rice is less moist and sticky, which will help the fried rice turn out fluffy and separate.
  • Chop your vegetables into small pieces: This will help them cook evenly and quickly.
  • Use a well-seasoned wok or large skillet: A well-seasoned wok or skillet will help prevent the rice and other ingredients from sticking.
  • Cook the rice over high heat: High heat will help the rice get crispy and flavorful.
  • Don't overcrowd the wok or skillet: Overcrowding will prevent the rice from cooking evenly.
  • Stir the rice constantly: Stirring the rice constantly will help prevent it from sticking and burning.
  • Add the eggs and vegetables towards the end of cooking: This will help prevent them from overcooking.
  • Season the rice to taste: Season the rice with soy sauce, fish sauce, and white pepper to taste.
  • Serve the rice immediately: Salted fish fried rice is best served immediately after cooking, while it is still hot and fluffy.
