1 medium tomatoes, diced into large chunks
1/2-1 can tomato sauce
1 dash garlic powder
1 -2 jalapeno pepper, chopped and seeded
1/2 white onion, chopped
2 tablespoons fresh cilantro, chopped

Steps:

  • Combine all ingredients, except tomato sauce, into a food processor or chopper.

1 red bell pepper
1 green bell pepper
1 yellow bell pepper
4 california avocados (or 2 florida avocados, Florida's avos are less expensive with the same great nutrients, when choosin)
1 (8 ounce) can black olives (Chopped)
1 (16 ounce) can sweet corn (or frozen if you prefer)
1 (16 ounce) can black beans
1/3 cup extra virgin olive oil
1 tablespoon red wine vinegar
1/3 cup lime juice (about 2 Limes)
tortilla chips or plantain chips

Steps:

  • This is very easy!
  • Chop up the peppers & toss in a large mixing bowl.
  • Add cans of beans, corn & olives.
  • Cut the avocados in half, scoop out the goods & toss the seed, chop as big or small as you like, mine were about the size of corn (Florida's avos are less expensive with the same great nutrients, when choosing avos you really cant go wrong, not too firm, not too mushy).
  • Mix in Lime Juice, EVOO & Vinegar

1 cup minced fresh cilantro
1/4 cup fat-free sour cream
2 tablespoons lime juice

1/4 teaspoon salt
Dash cayenne pepper
2 cups frozen corn, thawed
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 small sweet red pepper, finely chopped
1 small red onion, chopped
1 can (4 ounces) chopped green chilies
1 can (2-1/4 ounces) sliced ripe olives, drained
1/2 cup shredded reduced-fat cheddar cheese

  • Place green beans in a small saucepan and cover with water. Bring to a boil; cover and cook for 3-5 minutes or until crisp-tender. Drain and immediately place beans in ice water.
