12 ounces cream cheese, softened
4-1/2 cups sugar
12 eggs
1-1/2 teaspoons vanilla extract

FROSTING:
1/2 cup all-purpose flour
1-1/2 cups 2% milk
1-1/2 cups butter, softened
1-1/2 cups sugar
1-1/2 teaspoons vanilla extract
Red paste food coloring
FINISHING TOUCHES:
Red colored sugar
White edible glitter

Steps:

  • Line a greased and floured 18x 2-in. baking pan with waxed paper; grease and flour the paper. Set aside., In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Add flour; mix well. Pour into prepared pan., Bake at 325° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely., Meanwhile, in a small saucepan, whisk flour and milk until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Cover; cool to room temperature., Trace stocking pattern onto waxed paper; cut out. Arrange pattern over cake; with a sharp knife, cut out. Discard scraps. Transfer cake to a covered cake board., In a small bowl, cream butter and sugar until light and fluffy. Beat in vanilla. Add milk mixture; beat for 10 minutes or until fluffy., Tint 2-1/2 cups frosting red; spread 1-1/2 cups red frosting over stocking portion of cake. Coat sides and top of stocking with red sugar. 18-23cm fruit cake covered with marzipan and ready-to-roll white icing
250g ready-to-roll white icing (see 'Try' tip)
pink, green and orange food colouring (or use colours of your choice)
1 quantity soft royal icing (see 'Try' tip)
thin red ribbon
orange, green and pink Smarties , plus 3 small gift boxes

Steps:

  • Knead the ready-to-roll icing until smooth, then split into three equal pieces and colour each with colouring. Roll out to approx ½cm thickness and, using a template, cut out eight stocking shapes. Set aside.
  • Make the royal icing and colour as before. With the end of a skewer, dot small 'spots' all over the stocking shapes (or use a piping bag). Set aside to dry. Keep the coloured icing covered with cling film until later.
  • Fix the ribbon around the top edge of the cake, using a thin line of icing to help it stick. Using a little leftover coloured icing, 'hang' the stockings on the cake, just underneath the ribbon, in alternating colours. Top the cake with Smartie-filled boxes and scatter Smarties over the cake and cake board.

Water, vegetable oil and eggs called for on cake mix box
Tray or cardboard covered with wrapping paper and plastic food wrap or foil
1 container Betty Crocker™ Whipped fluffy white frosting
1 container Betty Crocker™ Rich & Creamy chocolate frosting
6 chocolate sugar wafers
Red gel food color
1 teaspoon red decorating sugar
3 miniature marshmallows, cut in half crosswise
2 small (1-inch) chewy chocolate candies, unwrapped
1 red licorice stick, cut in half
1 large marshmallow
1 roll Betty Crocker™ Fruit Roll-Ups® strawberry chewy fruit snack (from 5-oz box)
1 strip rainbow-berry flavor sweet-sour chewy licorice
2 large peppermint candies
Powdered sugar, if desired
Coarse sugar, if desired

Steps:

  • Heat oven to 325°F. Grease 9-inch square pan with shortening; coat with flour (do not use cooking spray). Lightly grease 1 muffin cup in mini muffin pan and 1 muffin cup in regular-size muffin pan.
  • Make cake batter as directed on box. Pour cake batter into 1 mini muffin cup, and 1 regular-size muffin cup, filling two-thirds full. Pour remaining batter into square pan. Bake cupcakes 11 to 14 minutes, square 47 to 53 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove cakes from muffin cups and pan; place rounded sides up on cooling racks. Cool completely, about 1 hour. If necessary, cut off rounded tops of cakes.
  • Meanwhile, reserve 1/2 cup of the white frosting in small bowl and 1/4 cup of the chocolate frosting in another small bowl.
  • Place square cake layer, rounded side down, on serving plate. Frost with remaining chocolate frosting.
  • Place regular cupcake, rounded side down, on cake. Place chocolate sugar wafers on their side around the cupcake, using reserved chocolate frosting to hold them in place around the cupcake, to form the chimney. Stack wafers, cutting as necessary to look like bricks, to make 2 layers of cookies on 4 sides of the cupcake.
  • Cut mini cupcake in half at an angle. In small bowl, mix 2 tablespoons of the reserved white frosting with red gel food color as desired to get deep red color. Place cupcake at an angle at top of chimney, and frost with red frosting. Sprinkle with red sugar. Press cut miniature marshmallows against bottom of red frosted cupcake. This is Santa's behind.
  • Microwave chewy chocolate candies on High 3 to 8 seconds, just until moldable. Firmly press on ends of red licorice sticks, and shape into boots. Press licorice ends into chimney cupcake to make Santa's legs.
  • Spoon remaining reserved frosting into resealable food-storage plastic bag. Cut tiny tip from 1 corner of bag, and pipe white frosting and snow on chimney, and fur around tops of boots.
  • Generously spread and mound remaining fluffy white frosting to look like snow drifts over cake, coming up against the chimney in mounds.
  • To make Santa's bag, wrap marshmallow with red fruit snack, pinching up at one end to form bag shape. Using paring knife, cut green strip out of rainbow-berry flavor sweet-sour chewy licorice. Wrap green candy strip around top of Santa's bag, and gently tie it onto the bag.
  • Sprinkle cake with powdered sugar and then with coarse sugar to look like freshly fallen snow. Store loosely covered.

1 ⅓ cups buttermilk
2 tablespoons vegetable oil
1 (9 ounce) package yellow cake mix
½ cup buttermilk
1 egg
1 ½ tablespoons unsweetened cocoa powder
2 tablespoons red food coloring
1 teaspoon cider vinegar
1 (8 ounce) package cream cheese, softened
1 cup margarine, softened
2 (16 ounce) packages confectioners' sugar
2 teaspoons peppermint extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 9 inch round cake pans.
  • In a large bowl, combine white cake mix, 3 egg whites, 1 1/3 cups buttermilk, and 2 tablespoons vegetable oil. Mix with an electric mixer for 2 minutes on high speed. In a separate bowl, combine yellow cake mix, 1/2 cup buttermilk, 1 egg, cocoa, red food coloring, and vinegar. Use an electric mixer to beat for 2 minutes on high speed.

1 (16 ounce) package vanilla frosting
10 ounces red fondant
3 ounces black fondant
