¼ cup coarse-grain mustard
¼ cup Greek yogurt
1 teaspoon garlic powder
1 pinch cayenne pepper
2 eggs, beaten
2 cups instant mashed potato flakes
4 hard-boiled eggs, peeled
1 (15 ounce) can HORMEL® Mary Kitchen® Corned Beef Hash
2 quarts vegetable oil for frying

Steps:

  • Mix whole grain mustard, Greek yogurt, garlic powder, and cayenne pepper in a small bowl until well blended.
  • Place 2 beaten eggs into a shallow dish; place potato flakes in a separate shallow dish.
  • Divide corned beef hash into 4 portions. Form corned beef hash around each egg until the egg is completely encased.
  • Roll encased eggs into the beaten egg and coat with mashed potato flakes until covered.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Drop 2 eggs into the hot oil and fry until brown, 3 to 5 minutes. Remove with a slotted spoon and place on a paper towel-lined plate. Repeat with remaining 2 eggs.
  • Cut the lengthwise and serve with mustard sauce.

3 dozen hard-boiled eggs (peeled)
1 quart distilled white vinegar
1 onion (sliced)
1 tablespoon mustard seeds
1 tablespoon dill seed
1 tablespoon crushed red pepper flakes
1 tablespoon black pepper or 1 tablespoon peppercorn
6 cloves fresh garlic
1 (16 ounce) jar jalapeno peppers, with juice
1 (16 ounce) jar habanero peppers, with juice
10 dashes Tabasco sauce

Steps:

  • Place all the ingredients except the hard-boiled eggs in a covered pot and boil for 15 minutes.
  • Place the hard-boiled eggs in a glass jar and cover them with hot pickling mixture until the eggs are completely covered.
  • If there is not enough vinegar, you may add some hot water to the vinegar solution.
  • Marinate the eggs in this solution, in the refrigerator, for 7 days before serving.
  • The longer they marinate, the more robust the flavor!

Steps:

  • Combine 2 ounces rye whiskey, 3/4 ounce Heering Cherry Liqueur, 3/4 ounce Chile-Infused Aperol, and 3/4 ounce fresh lemon juice in a cocktail shaker. Fill with ice, cover, and shake until outside of shaker is frosty, about 30 seconds. Strain into a coupe glass.
