2 (16 ounce) packages broccoli florets, frozen
1 (10 3/4 ounce) can cream of mushroom soup
1 cup sour cream
1 1/2 cups sharp cheddar cheese, shredded, divided
1 (6 ounce) can French-fried onions, divided

Steps:

  • Cook broccoli according to package directions; drain well.
  • In a large saucepan, combine the soup, sour cream, 1 cup cheese and 1 1/4 cups onions.
  • Cook over medium heat for 4-5 minutes or until heated through. Stir in the broccoli.
  • Pour into a greased 2-qt baking dish.
  • Bake, uncovered, at 325 degrees for 25-30 minutes or until bubbly.
  • Sprinkle with the remaining cheese and onions. Bake 10-15 minutes longer or until cheese is melted.

1 head broccoli
1/4 cup water
1 tablespoon olive oil
1 clove garlic, minced
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper

Steps:

  • Trim the woody skin off the broccoli stem and slice the broccoli into nice long "trees". In a large saucepan, mix the water, olive oil, garlic, red pepper flakes, salt, and pepper. Bring to a boil over high heat. Add the broccoli and cover to steam. After 3 minutes, turn off the heat, and allow the broccoli to sit for another couple of minutes. Toss to coat and serve.

2 (10 ounce) packages chopped frozen broccoli, thawed
1 (15.25 ounce) can whole kernel corn, drained
1 large onion, diced
1 (16 ounce) container sour cream
1 (10.75 ounce) can condensed cream of broccoli soup
2 cups shredded Cheddar cheese, divided
1 (6 ounce) package herb-seasoned dry bread stuffing mix
ΒΌ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together broccoli, corn, and onions. Stir in sour cream, soup, and 1/4 cup shredded cheese. In a separate bowl, toss together stuffing mix and melted butter. Spread broccoli mixture into a 2 quart casserole dish and cover with stuffing mix.
  • Bake in preheated oven for 30 minutes, or until heated through and browned on top. Sprinkle remaining 1 3/4 cups cheese on top and bake an additional 5 minutes, until cheese is melted and bubbly.
