Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir the ground beef in a skillet over medium heat until the meat is browned, breaking the beef up into crumbles as it cooks, about 10 minutes. Drain off excess fat, and transfer the beef into a mixing bowl. Slice the zucchini in half the long way, and use a spoon to scoop out the flesh, leaving a 1/2-inch thick shell all around the zucchini. Chop the scooped-out zucchini flesh, and add to mixing bowl. Stir in the bread crumbs, garlic, spaghetti sauce, black olives, and Parmesan cheese; mix the stuffing well. Lightly stuff both halves of the zucchini with the meat mixture. Place the zucchini halves into a baking dish, and cover tightly with foil.
- Bake in the preheated oven for 45 minutes, remove from oven, and remove the foil. Sprinkle 1/2 cup of shredded mozzarella cheese over each zucchini half. Move an oven rack to within 6 inches of the oven broiler's heat source, turn on the broiler, and broil the zucchini until the mozzarella cheese is browned and bubbling, about 5 minutes.

STUFFED ZUCCHINI WITH FRESH TOMATO SAUCE
This recipe, by Craig Claiborne with Pierre Franey, was published in New York Times in 1981. Its easy and sensational, and that's why I've been making it every summer since then. Recently, when I misplaced the recipe, I was unable to find it online. Now that I've found it, I wanted to post it where others can enjoy -- and I'll never panic again that I may not be able to find it.

Tips:
- Choose the right zucchini: Look for medium-sized zucchini that are firm and have smooth, unblemished skin. Avoid zucchini that are too large, as they tend to be less tender and flavorful.
- Prepare the zucchini correctly: To prepare the zucchini, cut off the ends and then slice them in half lengthwise. Scoop out the seeds and pulp, leaving a 1/2-inch thick shell. You can use a spoon or a melon baller to make this task easier.
- Don't overcook the zucchini: Zucchini cooks quickly, so it's important not to overcook it. Otherwise, it will become mushy and lose its flavor. Cook the zucchini until it is tender but still slightly firm.
- Use a variety of fillings: There are many different types of fillings that you can use for stuffed zucchini. Some popular options include ground beef, sausage, rice, vegetables, and cheese. Get creative and experiment with different flavors to find your favorite combination.
- Serve the stuffed zucchini immediately: Stuffed zucchini is best served immediately after it's cooked. This will help to prevent the zucchini from becoming soggy.
Conclusion:
Stuffed zucchini is a delicious and versatile dish that can be enjoyed as a main course or a side dish. It's a great way to use up leftover zucchini from your garden, and it's also a healthy and satisfying meal. With so many different variations to choose from, there's sure to be a stuffed zucchini recipe that everyone will love.
