Provided by Julesong

Categories     Fruit

Time 15m

Yield 6 serving(s)

Number Of Ingredients 7

14 ounces sauerkraut, rinsed
1 (1 ounce) package sugar-free instant pistachio pudding
1/2 teaspoon dried grated fresh lemon rind or 2 teaspoons fresh grated fresh lemon rind
1/2 cup coarsely chopped pistachios
1/2 cup coarsely chopped pecans
1/4 cup dried currant
2 (1 g) packets Splenda sugar substitute

Steps:

  • Drain the sauerkraut and place in a large bowl.
  • Fill the bowl with water and rinse pickling juices from the sauerkraut, then drain using a large strainer (or colander with small holes).

Provided by Kathie Carr

Categories     Other Salads

Time 15m

Number Of Ingredients 9

1 lb canned or refrigerated sauerkraut
1 green onion, finely chopped
1/2 green bell pepper, finely chopped
1/2 red bell pepper, finely chopped
1 stalk celery, finely chopped
1 carrot, shredded
1/4 c apple cider vinegar
1/2 c sugar

  • 2. Combine dressing with remaining ingredients. Refrigerate overnight to blend flavors. Serve cold.

Tips for Making Sauerkraut Salad:

  • Choose a high-quality sauerkraut: Look for sauerkraut that is naturally fermented and contains no added preservatives or sugars.
  • Rinse the sauerkraut before using: This will help to remove any excess saltiness and make the sauerkraut more palatable.
  • Use a variety of vegetables: Feel free to add other vegetables to your sauerkraut salad, such as shredded carrots, celery, or onions.
  • Add some sweetness: A little bit of sweetness can help to balance out the tartness of the sauerkraut. Try adding a spoonful of honey, maple syrup, or dried fruit.
  • Use a flavorful dressing: A simple vinaigrette or mayonnaise-based dressing can help to bring all the flavors of the salad together.
  • Serve the salad chilled: Sauerkraut salad is best served cold, so be sure to chill it for at least 30 minutes before serving.

Sauerkraut salad is a delicious and healthy dish that can be enjoyed as a side dish or a main course.
