Steps:

1 (16 ounce) package penne pasta
2 tablespoons olive oil (or bacon drippings)
5 hot Italian sausage links (you can use mild)
2 bell peppers (you may also use poblanos or other mild chiles)
1 white onion
1 tablespoon garlic (minced)
salt & pepper (to taste)
2 tablespoons flour (optional)
1/4 cup chicken broth or 1/4 cup stock
2 cups heavy cream
1 cup parmesan cheese (grated)
fresh basil

Steps:

  • Slice sausage into 3/4 inch slices.
  • Cut onions and peppers in to thin strips (julienne slices).
  • Mince 3 to 4 cloves of garlic or measure out 1 Tbsp of pre-minced garlic.
  • Chop basil into small strips (about 1 inch in length).
  • Prepare pasta based on packaged instructions.
  • Fry sausage in oil over medium-high heat until all pieces have turned brown.
  • Add peppers and onions, season with salt and pepper to taste, and fry with sausage for 2 minutes.
  • Add garlic and fry for 1 more minute.
  • Dust the mixture with 2 Tbsp of flour (this step is optional, and will create a thicker sauce) and stir for about 1 1/2 to 2 minutes.
  • Add chicken broth and stir mixture for about 30 seconds.
  • Turn heat down to medium-low and add cream. Stir to combine.
  • Slowly bring cream to a boil and let simmer for 5 minutes over medium-low heat, stirring occasionally.
  • Add Parmesan cheese and stir until cheese is melted into mixture.

2 teaspoons olive oil
1 yellow onion, chopped
1 (12 ounce) package fresh mushrooms, chopped
2 cloves garlic, minced
salt to taste
1 pound bulk spicy pork sausage
½ (14 ounce) package cooked bacon, diced
1 ½ (8 ounce) packages Neufchatel cheese
1 cup sour cream
2 teaspoons garlic and herb seasoning, or more to taste
salt and ground black pepper to taste
3 large green bell peppers, tops and seeds removed
1 (16 ounce) jar Alfredo sauce
½ cup shredded Cheddar cheese, or more to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 baking dish.
  • Heat olive oil in a large skillet over medium heat; cook and stir onion, mushrooms, garlic, and salt until onion is slightly translucent and softened, 7 to 10 minutes.
  • Cook and stir sausage in a separate skillet over medium heat, breaking into crumbles, until browned, about 10 minutes. Add bacon, Neufchatel cheese, and sour cream; stir to combine. Add mushroom mixture to sausage mixture, reserving about 1/4 cup mushroom mixture. Season with garlic and herb seasoning, salt, and black pepper.
  • Warm Alfredo sauce with the reserved mushroom mixture in a pan over medium-low heat, 3 to 5 minutes.
  • Stuff each bell pepper with sausage-mushroom mixture; place in the prepared baking dish. Top each bell pepper with Cheddar cheese; pour warmed Alfredo sauce over and around the bell peppers. Cover baking dish with aluminum foil.
  • Bake in the preheated oven until bell peppers are beginning to soften, about 30 minutes. Remove aluminum foil and bake until cheese is melted, 10 to 20 more minutes.

This is one of my concoctions that I came up with using what I had on hand one evening. It was a hit and has become a family favorite. Add a side salad and garlic bread and you have a meal fit for a king!

1 lb spicy italian sausage
1 pkg. frozen cheese tortellini
1 onions, yellow, medium - chopped
1 green bell pepper - chopped
1 can(s) sliced mushrooms - drained
1 jar(s) alfredo sauce
grated parmesan cheese

Steps:

  • 1. Cook and crumble sausage. Drain well. Add chopped onion, green pepper and mushrooms. Saute' until tender-crisp. Add jar of alfredo sauce and heat through. Cook tortellini according to package directions. Drain and return to pan. Add sausage, onions, mushrooms, peppers and sauce to tortellini. Heat through. Top with grated parmesan cheese and serve.

1 cup chopped onion
1 tablespoon minced garlic
½ cup dry white wine or chicken broth
½ pound fettuccine, cooked, drained
2 cups whipping cream
1 cup grated Parmesan cheese
1 bag (6 ounces) baby spinach leaves (about 8 cups)
Cracked black pepper to taste

Steps:

  • Cook sausage, onion, and garlic in stockpot over MEDIUM-HIGH heat 8-10 minutes or until sausage is thoroughly cooked, stirring frequently; drain. Return sausage mixture to pan. Stir in wine. Bring to a boil. Reduce heat to MEDIUM; cook 4-5 minutes or until most of the wine is cooked off. Add pasta, cream and cheese; bring just to a boil, stirring constantly. Cook and stir 4-5 minutes or until cheese is melted and sauce is thickened. Remove from heat. Stir in spinach; cover. Let stand 3 minutes. Season with pepper.

1 lb penne rigate
1 lb Italian sausage (link or bulk)
16 ounces alfredo sauce
1/4 cup red hot pepper sauce (or to taste )
2 -3 bell peppers (any color or all three)
1/2 red onion
1 tablespoon canola oil or 1 tablespoon olive oil
shredded parmesan cheese

Steps:

  • heat oil in large skillet; add sausage cook on med high.
  • while sausage is cooking, start pasta water
  • chop onions and peppers into 1/4 inch slices set aside.
  • when sausage is browned and thoroughly cooked, add fresh peppers and onions; cook just until veggies are hot; turn skillet down low.
  • when pasta water is done add pasta cook until al dente.
  • drain pasta water; reserve 1 cup of the water to thin sauce.
  • in medium saucepan, heat 1 jar of alfredo sauce to a low simmer while stirring occasionally.
  • add 1/4 cup Red Hot sauce alredo; stir until mixed.
  • pour pasta into skillet with sausage pepper mix.
  • pour alfredo sauce mixture into the skillet and toss togther.
  • add pasta water to thin sauce (if preferred).garnish with parmesan and serve.

1 box tri-color bowtie pasta
1/2 lb mild lean ground sausage
15oz jar(s) light roasted garlic alfredo sauce
1/2 bag(s) frozen chopped spinach, thawed, drained
4 oz pepper jack cheese, grated
3 c low-fat mozzarella cheese, shredded
1 pinch salt and pepper

Steps:

  • 1. While oven is preheating to 350 degrees, cook pasta until tender and drain. Cook sausage until there is no pink left and drain any grease (shouldn't be much with lean sausage). Thaw spinach under cool water and squeeze excess water out.
  • 2. Mix spinach, sausage, shredded pepperjack cheese and Alfredo sauce in 11 x 13 casserole dish. (After emptying the alfredo sauce jar I usually add a splash of hot water into the jar and put the lid back on and shake around to get the excess sauce and then add that to the mix also.) Sprinkle mozzarella over the top and season with salt and pepper.
  • 3. Bake at 350 for 10 minutes or until cheese is melted. Then broil for about 10 mins until the mozzarella slightly browns and gets crispy. Let cool for 5 minutes before serving hot.
