1 lb smoked sausage, finely diced
1 lb medium shrimp, peeled, deveined and chopped
1/2 cup bell pepper, chopped
3 3/4 cups water
1 (12 ounce) package dirty rice mix (low sodium)
1 (14 ounce) can shoe peg corn, undrained
1 (10 ounce) can cream of shrimp soup
1 bunch green onion, sliced
2 (10 ounce) jars mushrooms, undrained
1 -2 teaspoon Kitchen Bouquet, as desired for color

  • Pour the water into the pot, stir everything and bring to a boil. Whisk in the dirty rice mix and return to a boil. When everything is fully combined, stir in the corn, shrimp soup, green onions, mushrooms and Kitchen Bouquet.
  • At this stage, reduce the heat to low, cover the pot tightly, and simmer for about 25 minutes or until almost all of the liquid is evaporated.
  • Fold in the crab meat and crawfish tails. Cover the pot, remove from the burner and let stand for about 5 minutes. Fluff the rice with a fork before serving.

Tips:

  • Use high-quality ingredients. The better the quality of your ingredients, the better your casserole will taste. Look for fresh, flavorful sausage, sweet corn, and creamy milk. Avoid using canned or frozen vegetables, as they can make your casserole watery and bland.
  • Don't overcook the sausage. Sausage is a delicate meat that can easily become dry and tough if it's overcooked. Cook it just until it's browned and no longer pink in the center.
  • Drain the fat from the sausage. Before adding the sausage to the casserole, drain off any excess fat. This will help to keep your casserole from being greasy.
  • Use a combination of cheeses. A combination of cheeses will give your casserole a more complex and flavorful taste. Try using a sharp cheddar cheese, a mild Monterey Jack cheese, and a creamy Parmesan cheese.
  • Bake the casserole until it's bubbly and golden brown. The casserole is done baking when it's bubbly around the edges and the top is golden brown. This usually takes about 30 minutes.

Conclusion:

Sausage and corn casserole is a delicious and easy-to-make dish that's perfect for any occasion. It's a great way to use up leftover sausage and corn, and it's also a budget-friendly meal. With its creamy, cheesy, and flavorful filling, this casserole is sure to be a hit with your family and friends.
