Delicious, LOW CARB casserole.

3-4 c diced cooked chicken
1 lb pork sausage
1 stalk(s) celery, chopped fine
1 Tbsp onion, chopped
1/2 lb mushroom, sliced
8 oz cream cheese, softened
16 oz frozen cauliflower, cooked well & drained
8 oz cheddar cheese, shredded
1/2 tsp salt
1/2 tsp pepper
1/2 tsp paprika (optional)

Steps:

  • 1. Brown the sausage with the celery, onion and mushrooms.
  • 2. Stir the softened cream cheese into the sausage mixture until well blended.
  • 3. Coarsely chop the cooked cauliflower.
  • 4. Mix all ingredients and spread in a greased 9"x13" baking dish.
  • 5. If desired, dust the top with paprika.
  • 6. Bake, covered with foil, at 350º for about 30 minutes.
  • 7. Uncover and bake until hot and bubbly and top is lightly browned, about 10 to 15 minutes.

This is my daughter's recipe. It is a wonderful breakfast casserole with so much flavor and is very easy to prepare.

8 eggs, slightly beaten
3 - 4 c hash brown potatoes
small can evaporated milk
1 can(s) cream of mushroom soup
2 c colby-jack cheese
1 lb sausage, browned and drained well

Steps:

  • 1. Mix slightly beaten eggs, cream of mushroom soup and evaporated milk and place in covered container in the refrigerator overnight to set. Next a.m., set out on counter for 30 minutes while you are preheating your oven to 350° and browning your sausage. Spray a 9" x 13" oven pan with cooking spray. Layer in this order - sausage, hash browns, cheese (leave out enough cheese to place on top of casserole). Pour egg mixture on top and bake about 40 minutes or until bubbly and mixture is set. A few minutes before casserole is completely done, top with remaining cheese and finish cooking. (The picture honestly doesn't do this wonderful casserole the justice it deserves.)
