½ pound bulk mild Italian sausage
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups low-fat milk
1 pinch salt
1 pinch ground nutmeg
1 egg
1 (15 ounce) container part-skim ricotta cheese
1 tablespoon dried parsley
2 (24 ounce) jars marinara sauce, divided
1 (9 ounce) package no-boil lasagna noodles, divided
1 cup chopped cremini mushrooms, divided
1 (16 ounce) package shredded part-skim mozzarella cheese, divided
½ cup grated Parmesan cheese, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Place the sausage in a skillet over medium heat and cook until browned and crumbly, about 10 minutes. Drain the sausage and set aside.
  • To make bechamel sauce, melt the butter in a saucepan over medium heat and whisk in the flour. Allow the flour and butter to cook until light and foamy, about 2 minutes, whisking constantly; whisk in milk, a little at a time. Whisk in the salt and nutmeg and bring the sauce to a bare simmer, whisking constantly until thickened, about 10 minutes. Remove sauce from the heat and set aside.
  • In a bowl, beat the egg and stir in the ricotta cheese and parsley until thoroughly combined.
  • To assemble lasagna, pour about 1 1/2 cup of marinara sauce into the bottom of the prepared baking dish and top the sauce with 4 lasagna noodles, overlapping if necessary. On the noodles, layer 1/3 of the ricotta mixture, followed by 1/3 of the cooked sausage, 1/3 cup of mushrooms, 1/4 of the bechamel sauce, 1 cup of the mozzarella cheese, 1/8 cup of the Parmesan cheese and 1 more cup of marinara sauce. Repeat the layers twice more, ending with a final layer of noodles topped with a layer of marinara sauce, bechamel sauce, the remaining mozzarella cheese, and remaining Parmesan cheese. Cover the dish with foil.
  • Bake in the preheated oven until bubbly and the noodles are tender, about 1 hour. Remove foil and bake until the top cheese layer is browned, about 5 more minutes. Allow the lasagna to stand for 10 minutes before cutting.

1 cup dry red wine
4 2/3 cups marinara sauce (from two 26-ounce jars)
1 9-ounce package no-cook lasagna noodles
1 15-ounce container ricotta cheese
2 8-ounce bags Italian blend grated cheese (4 cups)

Steps:

  • Preheat oven to 400°F. Heat oil in heavy large pot over high heat. Add mushrooms, onion, and seasoning blend; sauté until vegetables begin to soften, about 6 minutes. 2 tablespoons extra-virgin olive oil
2 cloves garlic, thinly sliced
One 28-ounce can whole plum tomatoes, lightly crushed
Kosher salt and freshly ground pepper
Two 4-ounce packages mixed mushrooms, coarsely chopped
1 pound sweet Italian sausage, removed from casings
1 pound mozzarella cheese
Two 15-ounce containers ricotta cheese
1 large egg
3 fresh lasagna sheets (about 7 ounces)
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 350 degrees F. In a medium pot heat 1 tablespoon of the oil over medium-high heat. Add the garlic and cook until fragrant, about 1 minute. Add the tomatoes with their juices, oregano, 3/4 teaspoon salt and 1/4 teaspoon pepper. Bring to a simmer and continue to cook until the tomatoes soften and the sauce thickens, 20 minutes, breaking up the tomatoes with a spoon as they soften.   • Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat and add the mushrooms. Cook until the mushrooms have released their liquid, 5 to 7 minutes. Add the sausage and continue to cook, breaking the sausage up with a spoon, until the sausage is browned and cooked through, another 10 minutes. Add the tomato sauce and stir to combine.
  • Thinly slice about a quarter of the mozzarella and set aside; grate the rest on a box grater. Combine the grated cheese with the ricotta and the egg. Spread the reserved 2/3 cup tomato sauce in the bottom of a 9-by-13-inch baking dish. Top with 1 pasta sheet, a third of the ricotta mixture and a third of the meat sauce. Repeat with the remaining pasta, ricotta and meat sauce. Cover with foil and bake until the sauce is bubbling around the edges and the pasta is tender, about 45 minutes. 1/2 lb sweet Italian sausage
1 portabella mushroom, stem removed
1 small yellow onion, chopped
4 garlic cloves, chopped
2 fresh rosemary sprigs, leaves stripped and finely chopped
1/2 teaspoon crushed red pepper flakes
salt
fresh ground black pepper
1/2 cup chicken broth
1 lemon, zest of
1 lemon, juice of
2 cups ricotta cheese
1 egg
1/2 cup grated parmigiano-reggiano cheese
1/2 cup plain breadcrumbs
1 (24 ounce) package prepared polenta, cut into 21 disks about 1/4 inch thick (plain or flavored)
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 450°F.
  • Preheat a large skillet over med-high heat with 2 tablespoons olive oil and butter.
  • When the butter has melted, add the sausage, breaking it up with a wooden spoon.
  • While the sausage is starting to brown, cut the portobello mushroom in half and then thinly slice and add to the sausage.
  • Chop and add to the pan as you go-the onion, garlic, and rosemary.

  • While the sausage and mushrooms are cooking down in the liquid-combine the ricotta cheese, egg, lemon zest, Parmigiano, and bread crumbs in a bowl.
  • Brush an 8-inch springform pan or an 8x8 inch baking dish with a little olive oil; place 7 disks of the polenta on the bottom of the dish.
  • If they overlap a little, that is fine (it will vary depending on what kind of dish you are using).
  • Divide the sausage and mushroom mixture into 3 even portions; do the same with the ricotta mixture.
  • Using the back of a spoon, spread 1/3 of the ricotta mixture on top of the polenta (don't make yourself crazy doing this; just mush it out over the polenta).
  • Top the ricotta with 1/3 of the sausage mixture.
  • Repeat layers 2 more times, starting with polenta and finishing with sausage mixture.
  • Sprinkle the top with mozzarella.
  • Cover the baking dish with foil; place in oven; bake for 15-18 minutes.

1 large onion, chopped

1 cup dry red wine (have successfully substituted water)
2 (26 ounce) jars marinara sauce (I use Newman's Own)
2 (9 ounce) packages no-boil lasagna noodles (huge time saver)

2 (8 ounce) bags Italian cheese blend

  • Heat oven to 400 degrees.

I started making this when someone gave me a jar of roasted red pepper sauce from a gourmet deli, now I create my own. The flavor combination cannot be beat! If you regularly have containers of homemade marinara in your freezer then you'll love this. Great with a green salad and garlic vinaigrette like my Recipe #225142. Serve a big, bold red wine with this and you can't go wrong!

3 cups ricotta cheese
1 cup parmigiano-reggiano cheese, grated
1 egg
2 tablespoons extra virgin olive oil
2 lbs mild Italian sausage, casings removed
1 lb cremini mushroom, sliced 1/4 inch thin
1/3 cup flat-leaf Italian parsley, chopped
2 red peppers, roasted, peeled, seeded and chopped
2 quarts marinara sauce
1 lb lasagna noodle, cooked
4 cups mozzarella cheese, grated

Steps:

  • Preheat the oven to 350 degrees.
  • In a bowl, stir together the ricotta, Parmi, egg, salt and pepper.
  • In a large saute pan over medium heat, warm the olive oil add the sausage and cook until lightly bowned, about 10 minutes.
  • Set the sausage on a paper towl to drain on the side.
  • Add the mushrooms to the hot pan and saute about 8 minutes, until golden brown.
  • Transfer the mushrooms to a bowl and add the sausage and parsley and mix with the red peppers and the marinara sauce.
  • Spread 1 cup of the Marinara sauce on the bottom of the lasagna pan.
  • Place 1/4 of the noodles on top of the sauce in a single layer.
  • Spread 1/3 of the ricotta mixture on top of the noodles.
  • Spread 1 cup of the mozzarella cheese over the ricotta mixture.
  • Repeat twice.
  • Finish with mozzarella.
  • You will have leftover Marinara sauce to serve at the table.
  • Cover and bake for 45 minutes.
  • Uncover and continue baking another 30 minutes, or until the lasagna is golden and bubbling.
  • Let stand for 15 minutes before serving.
  • Heat the remaining Marinara Sauce and serve as a topping.

1 pound lean spicy Italian turkey sausage, casings removed (see Variation)
4 cups sliced mushrooms, (10 ounces)
1/4 cup water
1 pound frozen spinach, thawed
1 28-ounce can crushed tomatoes, preferably chunky
1/4 cup chopped fresh basil
1/4 teaspoon salt
Freshly ground pepper, to taste
1 pound part-skim ricotta cheese, (2 cups)
8 ounces part-skim mozzarella cheese, shredded (about 2 cups), divided

Steps:

  • Preparation 1.Preheat oven to 350°F. Coat a 9-by-13-inch baking dish with cooking spray. 2.Bring a large pot of water to a boil. Add noodles and cook until not quite tender, about 2 minutes less than the package directions. Drain; return the noodles to the pot, cover with cool water and set aside. 3.Coat a large nonstick skillet with cooking spray and heat over medium-high heat. Add sausage; cook, crumbling with a wooden spoon, until browned, about 4 minutes. Add mushrooms and water; cook, stirring occasionally and crumbling the sausage more, until it is cooked through, the water has evaporated and the mushrooms are tender, 8 to 10 minutes. Top with a third layer of noodles and the remaining tomatoes. 6.Cover the lasagna with foil and bake until bubbling and heated through, 1 hour to 1 hour 10 minutes. Remove the foil; sprinkle the remaining mozzarella on top. Return to the oven and bake until the cheese is just melted but not browned, 8 to 10 minutes. Let rest for 10 minutes before serving. Vegetarian Variation: Use a sausage-style soy product, such as Gimme Lean, or simply omit the sausage altogether. Make Ahead Tip: Prepare through Step 5 up to 1 day ahead 333 calories
