6 ounces chorizo sausage or spicy Italian sausage, casings removed
3 teaspoons olive oil
1 small onion, chopped
1 small russet potato, peeled, thinly sliced
1/2 red bell pepper, cut into thin strips
6 large eggs
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup grated mozzarella cheese

Tips:

  • Use high-quality ingredients: Fresh, high-quality ingredients will make a big difference in the taste of your omelet. Look for organic or free-range eggs, fresh sausage, and crisp potatoes.
  • Cook the sausage and potatoes properly: The sausage should be cooked through but not dry, and the potatoes should be golden brown and tender. If you're not sure how to cook sausage or potatoes, there are plenty of resources available online or in cookbooks.
  • Use a good non-stick skillet: A good non-stick skillet will prevent the omelet from sticking and make it easier to flip.
  • Be patient: Omelets take a little time to cook, so don't rush the process. Cook the omelet over medium heat and be patient until it is cooked through.
  • Serve immediately: Omelets are best served immediately after they are cooked. This is when they are at their lightest and fluffiest.

Sausage and potato omelets are a delicious and easy-to-make breakfast or brunch dish.
