PASTA WITH ITALIAN SAUSAGE AND PUMPKIN SAUCE

Pasta with Italian Sausage and Pumpkin Sauce image

This a great way to use pumpkin in your cooking rather than your baking. The flavor of the pumpkin doesn't come out very strong and if you didn't know what was in it, you probably wouldn't even realize it was pumpkin. But it makes a great creamy pasta sauce with a different type of flavor.

Tips:

  • Choose the right type of sausage: Italian sausage, bratwurst, or chorizo are all good options for this recipe. If you're using a spicy sausage, you may want to reduce the amount of red pepper flakes called for in the recipe.
  • Cook the sausage thoroughly: Sausage should be cooked to an internal temperature of 160 degrees Fahrenheit before serving.
  • Use fresh pumpkin puree: Fresh pumpkin puree has a more intense flavor than canned puree. If you're using canned pumpkin puree, be sure to drain it well before using.
  • Add some greens to the pasta: Chopped kale, spinach, or arugula would all be great additions to this dish.
  • Serve with a sprinkle of Parmesan cheese: Parmesan cheese adds a nice salty and nutty flavor to this dish.

Conclusion:

This sausage and pumpkin pasta is a quick and easy weeknight meal that's packed with flavor. The sausage and pumpkin are a delicious combination, and the pasta is cooked in a creamy sauce that's made with pumpkin puree, milk, and Parmesan cheese. This dish is sure to please everyone at your table.
