I had a bunch of ingredients here that I had to use before Sunday. This is what I did, for 2 meals.

1 1/2 lbs Italian sausage
1 green pepper, sliced vertically
1 red pepper, sliced vertically
1 onion, sliced
8 ounces mushrooms, sliced
1 tablespoon fresh thyme
1 tablespoon fresh marjoram
2 tablespoons olive oil
salt
pepper, to taste
12 ounces pasta sauce, bottled
1/4-1/2 teaspoon red pepper flakes
12 ounces pasta, cooked
fresh grated parmesan cheese, to taste

Steps:

  • Heat a pan on high heat.
  • Add olive oil; coat pan.
  • Add onions and cook until softened, 2 minutes. L lower heat, add mushrooms and cook for 6-8 minutes, stirring.
  • Add peppers and sauté for 1-3 minutes; add herbs and seasonings.
  • Meanwhile, with fork, pierce sausages on all sides, then cover with a sheet of wax paper in the microwave for 4 minutes per side, on high.
  • Remove and slice into 1-inch slices.
  • Add to pan with veggies; stir and serve on hoagie rolls or Italian bread.
  • For second dinner:.
  • Heat pasta sauce in microwave for 2-3 minutes, stir. Add veggies and sausage; simmer for 15 minutes covered (or place in a covered on the stovetop).
  • Cook 12 oz of pasta of your choice and top with sauce, sprinkle with parmesan cheese, enjoy!

1/2 (16-ounce) package ziti
2 tablespoons canola oil
1 medium yellow onion, diced
2 teaspoons chopped garlic
1 (15-ounce) can crushed tomatoes
1 tablespoon Italian seasoning
Reserved sausage and pepper skewers, from Sausage and Pepper recipe
Salt and fresh ground black pepper
1 cup grated mozzarella cheese

Steps:

  • Heat the oven to 375 degrees F.
  • Coat a 9 by 13-inch baking pan lightly with cooking spray.
  • Bring a large pot of water to a boil over medium heat. Add the pasta and cook for about 6 minutes. It should be a little less than al dente; it will finish cooking in the oven.
  • While the pasta is cooking, heat the canola oil in a large skillet over medium-high heat, add the onion and garlic and saute until slightly tender, about 3 minutes. Add the tomatoes and Italian seasoning and cook for another 5 minutes. Chop the reserved sausage and peppers and add them to the skillet to heat through. 8 (4 ounce) links Italian sausage
1 tablespoon garlic flavored olive oil
3 green bell pepper, seeded and cut into strips
2 red bell peppers, seeded and cut into strips
1 yellow bell pepper, seeded and cut into strips
1 (14.5 ounce) can diced tomatoes, drained
2 tablespoons Italian seasoning
6 cloves garlic, chopped
1 large onion, cut into wedges
¼ cup grated Parmesan cheese
¼ cup shredded mozzarella cheese
2 tablespoons garlic flavored olive oil

Steps:
