SAUSAGE QUICHE SQUARES
Having done some catering, I especially appreciate interesting, appetizing finger foods. I'm constantly asked to make these popular squares to serve at parties. They're almost like a zippy, crustless quiche. -Linda Wheeler, Middleburg, Florida

FLORIDANATIVE SAUSAGE QUICHE SQUARES
I got this recipe from a magazine probably 15 years ago. It's a great dish for breakfast, snack, and freezing for later. It's portable for DH - drop it in a baggie, and he heats it up when he gets to work. Even the kids like it. Plus you can add different meats (ground pork or turkey sausage, sweet italian sausage, or even crab), a variety of vegetables, and different spices and cheese mixtures. Try this one and then let me know your favorite combinations.

Tips:
- Use a variety of cheeses. This will give your quiche a more complex flavor. Some good options include cheddar, Gruyère, Parmesan, and Swiss.
- Don't overcook the quiche. The center should be slightly jiggly when you take it out of the oven. This will help to prevent the quiche from becoming dry.
- Let the quiche cool slightly before serving. This will help it to set and make it easier to slice.
- Serve the quiche with a side of salad or fruit. This will help to balance out the richness of the quiche.
Conclusion:
