Yield 1 Casserole, 4 serving(s)

Number Of Ingredients 14

1 1/2 tablespoons unsalted butter, plus extra to grease the baking dish
2 teaspoons olive oil
8 ounces fresh spinach, washed, dried, and stemmed
1/2 lb Italian sausage, broken out of casing into small pieces
1 large red onion, peeled and sliced thin
1 small garlic clove, minced
3 medium sized russet potatoes, peeled and cut into 1-inch chuncks
1/4 cup heavy cream
2 tablespoons chicken broth
1 tablespoon cider vinegar
1 dash nutmeg
3/8 teaspoon salt
1/4 teaspoon pepper
1 cup shredded gruyere or 1 cup swiss cheese

Steps:

  • Preheat oven to 400°F Butter a 6x9 or 8x8 inch baking dish.
  • Heat one of the teaspoons of olive oil in a large skillet over medium-high heat until shimmering. Add spinach and cook, stirring often, until wilted, about 3 minutes. Transfer spinach to strainer and drain. When cool, squeeze out liquid and roughly chop the spinach.

  • Meanwhile, place potatoes in a large pot and add enough water to cover by 1 inch. Bring potatoes to boil over high heat, then lower heat to a simmer. Cook until potatoes are tender, about 15 minutes. Drain potatoes, wipe pot dry, put potatoes back into the pot, and mash with butter, cream, broth, vinegar, nutmeg, salt and pepper. Stir in spinach and 1/2 cup of the cheese.
  • Transfer potato-spinach mixture to prepared baking dish. Top with sausage-onion mixture and sprinkle with remaining 1/2 cup of cheese. Bake until potatoes are very hot and cheese is golden and bubbly, 20 to 25 minutes. Cool for 10 minutes before serving.

SAUSAGE, POTATO, AND SPINACH SOUP

Sausage, Potato, and Spinach Soup image

Wow. I normally make zuppa toscana, and this is similar but better. I did add more spinach than it called for (personal preference), but I'll post as listed. The only thing I would have done differently is double the recipe. Recipe courtesy of damndelicious.net.

Tips:

  • Use fresh ingredients: Fresh vegetables, herbs, and spices will give your tart the best flavor. If you can, try to use organic ingredients whenever possible.
  • Don't overcook the vegetables: The vegetables should be tender but still have a bit of a bite to them. Overcooked vegetables will be mushy and flavorless.
  • Use a good quality cheese: The cheese is one of the most important ingredients in the tart, so make sure to use a good quality cheese that you enjoy. A sharp cheddar or Gruyère cheese would be a good choice.
  • Don't over-crowd the tart pan: When you're assembling the tart, make sure not to over-crowd the tart pan. The vegetables and sausage should be spread out in an even layer.
  • Bake the tart until the crust is golden brown: The tart is done baking when the crust is golden brown and the cheese is melted and bubbly.

Conclusion:

This sausage, spinach, and potato tart is a delicious and easy-to-make meal that is perfect for any occasion. It's packed with flavor and nutrients, and it's sure to be a hit with your family and friends. So next time you're looking for a quick and easy meal, give this tart a try!
