18 jumbo pasta shells (from 16-oz package)
1 lb bulk Italian sausage
1 container (15 oz) whole-milk ricotta cheese
1 egg, slightly beaten
1 can (28 oz) tomato sauce
1 tablespoon Italian seasoning
1 teaspoon garlic powder
2 cups shredded Italian cheese blend (8 oz)

Steps:

  • Heat oven to 350°F. Cook and drain pasta as directed on package. Rinse with cool water; drain.
  • Meanwhile, in 10-inch nonstick skillet, cook sausage over medium-high heat 5 to 7 minutes, stirring occasionally, until no longer pink; drain. Stir ricotta cheese and egg into sausage.
  • In medium bowl, mix tomato sauce, Italian seasoning and garlic powder. In 13x9-inch (3-quart) glass baking dish, spoon 1 cup tomato sauce mixture over bottom. Spoon about 2 tablespoons sausage mixture into each pasta shell. Arrange shells on sauce in baking dish. Spoon remaining sauce over stuffed shells.
  • Bake uncovered 30 minutes. Sprinkle with cheese. Bake uncovered about 10 minutes longer or until cheese is melted.

A Canadian Living hit with the Ontario ZAARians, at our Annual Appy-fest. While this recipe actually calls for mild Italian sausge I used Bajan-seasoning called Delish-Dish in a meatball stuffing. I doubt that many ZAARians have "Bajan Delish-Dish" in their pantry.To stay true to the original recipe, therefore, I shall post the recipe as it appears in Canadian Living.. I like the recipe because of the ease with which ingredients combine to produce an interestingly flavourful filling. Can be used as a main course, or appetiser.

16 jumbo sized pasta shells
2 tablespoons extra virgin olive oil
1 onion, finely diced
1 sweet green pepper, finely diced
2 minced garlic cloves
1 lb mild Italian sausage (casings removed)
1 egg
1/4 cup chopped fresh parsley
2 cups bottled strained tomatoes
1 teaspoon dried oregano
1 pinch salt
1/4 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese

Steps:

  • Preheat oven to 425F (220C)
  • In a large pot of boiling salted water, cook pasta shells until tender, but firm; about 14 minutes. Drain and set aside for future use.
  • Meanwhile, in a skillet, heat olive oil over medium heat; cook onion, green pepper and garlic until softened, about 6 minutes. Transfer to a bowl; stir in sausage, egg and parsley.,
  • Place 1 heaping tbsp mixture in each of the shells. Arrange in greased, 8 inch glass baking dish.
  • In a bowl, stir together tomatoes, oregano and salt Spoon over stuffed shells.
  • Sprinkle with mozzarella and parmesan cheeses; cover and bake in 425F oven for 20 minutes.
  • Uncover and bake further 10 minutes, or until cheese is golden and instant read, digital thermometer inserted in the centre of shell registers 160°F.

18 uncooked jumbo pasta shells
1 pkg. Jimmy Dean® Premium Pork Regular Roll Sausage
1 onion, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
1 container (15 ounces) ricotta cheese
1 cup (4 ounces) shredded mozzarella cheese, divided
1/3 cup (about 1 1/2 ounces) grated Parmesan cheese, divided
1 egg
2 tablespoons chopped fresh parsley
1/2 teaspoon dried oregano
1 jar (24-26 ounces) spaghetti sauce

Steps:

  • 1.Preheat oven to 350°F. Cook shells according to package directions. Meanwhile, cook sausage, onion, red pepper and garlic in large skillet over MEDIUM-HIGH heat 8-10 minutes or until sausage is thoroughly cooked, stirring frequently; drain. 2.Mix ricotta, ½ cup mozzarella cheese, ¼ cup Parmesan cheese, egg, parsley and oregano in large bowl. Stir in sausage mixture. 3.Drain shells; rinse with cool water. Spread 1 cup sauce onto bottom 13x9-inch baking dish. Add shells; fill each with about ¼ cup of the sausage mixture. Cover with remaining sauce, and remaining mozzarella and Parmesan cheeses. Cover. 4.Bake 50 minutes or until shells are thoroughly heated and cheese is melted and lightly browned, uncovering after 30 minutes. Cook's Tips: Substitute green bell pepper for the red bell pepper. Prepare using 1 pkg. Jimmy Dean® Premium Pork Sage or Hot Roll Sausage. Yield 6 servings (3 stuffed shells each)
