1 lb macaroni (or your favorite tube pasta)
2 tablespoons butter
1/2 cup yellow onion, finely chopped
1/2 lb mild Italian pork sausage, crumbled
1 1/2 cups whole canned tomatoes, with their juice,coarsely chopped
salt & freshly ground black pepper
1/2 cup whole-milk ricotta cheese
2 tablespoons freshly torn basil leaves
1/4 cup fresh parmigiano-reggiano cheese, grated

Steps:

  • Melt the butter in a large skillet over a medium high heat.
  • Add the onion and cook until it softens and turns a rich golden color Add the sausage and break it up with a wooden spoon.

2 tablespoons olive oil, plus extra-virgin olive oil for garnish
1 tablespoon aged balsamic vinegar
2 teaspoons chopped fresh thyme leaves

12 ounces mild or hot (or combination of both) Italian sweet sausage
8 large eggs
1 cup grated provolone cheese
1/4 cup grated Romano cheese
2 ounces baby arugula

12 ounces fresh ricotta cheese
4 tablespoons unsalted butter

  • Preheat the oven to 350 degrees F. Toss the tomatoes with the olive oil, vinegar and thyme leaves and season with salt and pepper. Put in a small baking dish in one layer and roast until completely soft and the juices have evaporated, about 30 minutes. Let cool slightly. Leave the oven on. Heat the canola oil in a 10-inch nonstick pan over high heat until it begins to shimmer. Add the sausage and cook until golden brown, and then transfer to a paper-towel-lined plate using a slotted spoon. Remove the fat from the pan. Whisk the eggs in a large bowl until light and fluffy. 3/4 pound bulk hot or mild Italian sausage (pork, chicken or turkey)

Pinch of red-pepper flakes, plus more for serving (optional)
1 (28-ounce) can whole peeled tomatoes with their juices
1 (14-ounce) can crushed or strained tomatoes
2 bay leaves

Steps:

1 bunch flat-leaf spinach (10 to 14 ounces), washed well, tough stems removed, chopped (about 7 cups)
