1 cup chopped onion
2 cloves garlic, minced
5 cups beef broth
½ cup water
½ cup red wine
4 large tomatoes - peeled, seeded and chopped

½ tablespoon packed fresh basil leaves
½ teaspoon dried oregano
1 (8 ounce) can tomato sauce
1 ½ cups sliced zucchini
8 ounces fresh tortellini pasta
3 tablespoons chopped fresh parsley

Steps:

  • In a 5 quart Dutch oven, brown sausage. Remove sausage and drain, reserving 1 tablespoon of the drippings.
  • Saute onions and garlic in drippings. Stir in beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes.
  • Skim fat from the soup. Stir in zucchini and parsley. Simmer covered for 30 minutes. Add tortellini during the last 10 minutes. Sprinkle with Parmesan cheese on top of each serving.

1 cup chopped onions
2 cloves garlic, minced
5 cups beef stock
⅓ cup water
½ cup red wine

1 pound sweet Italian sausage or chorizo sausage, casings removed
1 cup chopped onion
2 large garlic cloves, sliced
5 cups beef stock or canned broth
2 cups chopped tomatoes (about 3/4 pound)
1 8-ounce can tomato sauce
1 large zucchini, sliced
1 large carrot, thinly sliced
1 medium-sized green bell pepper, diced
1/2 cup dry red wine
2 tablespoons dried basil
2 tablespoons dried oregano
8 to 10 ounces purchased fresh cheese tortellini
Freshly grated Parmesan cheese

Steps:

  • Sauté Italian sausage in heavy Dutch oven over medium-high heat until cooked through, crumbling with back of spoon, about 10 minutes. using slotted spoon, transfer sausage to large bowl. Pour off all but 1 tablespoon drippings from Dutch oven. Add onion and garlic to Dutch oven and sauté until translucent, about 5 minutes. Return sausage to Dutch oven. 2 (14 1/2 ounce) cans diced tomatoes
1 cup carrot, thinly sliced

1 cup celery

1 can red kidney beans, drained

  • Steam sausage for 15 minutes to reduce fat content.

Sausage & Tortellini Soup image

I wanted to make some soup on a cold day, but was tired of plain tomato or vegetable soup. So I played around with a few ingredients and came up with this. Hope you like it. I know I do. Oh and feel free to use some diced onion instead of the minced, but my dh can't handle fresh onion so i have to use the other. Sometimes i'll throw in some chopped cabbage too.

1 lb reduced-fat sausage
1 (32 ounce) box low-fat chicken broth or 1 (32 ounce) box low sodium chicken broth
1 (14 1/2 ounce) can diced tomatoes with green pepper celery and onion
1 (15 ounce) can tomato sauce
1 cup sliced button mushroom
1 tablespoon minced garlic
1 tablespoon minced onion
1 tablespoon italian seasoning
1 teaspoon ground pepper
1 (10 ounce) package cheese tortellini

Steps:

  • In a large pot, brown the sausage over medium-high heat with minced garlic and minced onion.
  • Pour in the chicken broth and use a wooden spoon to get up all the brown bits from the bottom of the pan.
  • Add in diced tomatoes, tomato sauce, Italian seasoning, pepper, and mushrooms.
  • Reduce heat to low/medium low and let simmer for at least 30 minutes, but the longer you let it cook, the better flavor it will have.
  • Add the tortellini and let cook through, about 10 minutes (I use frozen tortellini so it takes longer, but would be shorter if you use fresh or refrigerated).
  • Serve and enjoy.

4 Tbsp olive oil
1 medium onion, diced
1 medium green bell pepper, diced
1 medium zucchini, diced
1 medium eggplant, peeled and diced
3 clove garlic, smashed and finely chopped
1/2 tsp salt
2 tsp italian seasoning
1 24 ounce jar marinara sauce
1 28 ounce can italian style diced tomatoes, undrained
1 8 ounce jar chunky salsa (mild)
2 14.5 ounce cans beef broth
1 tsp sugar
1 lb sweet italian sausage, baked and thinly sliced
1 14 ounce package frozen cheese tortellini
freshly grated parmesan cheese for granish

Steps:

  • 1. Place a 5 quart Dutch oven over medium high heat. Add the olive oil, onion, pepper, zucchini, eggplant, garlic, salt and Italian seasoning. Cook, stirring often, for 4-5 minutes or until vegetables are crisp/tender.
  • 2. Add the marinara sauce, diced tomatoes, salsa, broth and sugar. Mix well. Cook for 6-8 minutes, or until soup reaches a simmer.
  • 3. Add the sausage and tortellini. Cook until mixture starts to simmer. Reduce heat and cover. Cook an additional 10-12 minutes, stirring often, or until tortellini is tender.
  • 4. Garnish each serving with grated Parmesan, if desired.

1 lb. Italian Sausage, rolled into 1/4 teaspoon size balls
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
2 red bell peppers, diced
1 bay leaf
1/8 teaspoon red pepper flakes
8 cups vegetable or chicken broth
2 (15 ounce) cans diced tomatoes
1 1/2 cups chopped kale
2 cups cheese tortellini (fresh or frozen)
1/4 cup chopped fresh basil
Salt and black pepper, to taste

Steps:

  • 1. In a large skillet, brown the mini sausage balls until cooked through. This will take about 5-7 minutes. Drain off the grease and place the sausage balls on a plate lined with paper towels. 2. In a large pot, heat the olive oil over medium high heat. Add the onion and cook until tender, 3-4 minutes. Stir in the garlic and cook for 2 minutes. Stir in the red peppers, bay leaf, and red pepper flakes. Cook until peppers are soft, about 3 minutes. 3. Stir in the broth, tomatoes, and kale. Add the cheese tortellini and cook until tortellini is tender, 7-8 minutes. Stir in the fresh basil and season with salt and pepper, to taste. Stir in the mini sausage balls and heat until warm. Remove the bay leaf and serve. Note-you can make this soup vegetarian by using vegetable broth and omitting the sausage. Josh always ladles up my bowl first, and then adds the sausage. This soup recipe is very adaptable!
