JALAPENO POTATOES
Wonderful cheesy flavor with a slight kick from the jalapenos. The pimiento and jalapenos add a nice color contrast to the pale orange sauce. Use your discretion with the amount of jalapenos. You can also sub 1/8 to 1/4 cup chopped hot mixed peppers. It's best to use a waxy-type potato so they will keep their shape.

SAUSAGE AND POTATOES
This recipe is from the package of Liptons Onion Soup, though I have written it in my own words with some tune ups for clarity. The children really like it, though I prefer it using the hot italian sausage rather than the sweet.

- Cook the sausage until it is browned and crispy: This will give it a delicious flavor and texture.
- Cook the potatoes until they are tender: But not mushy. You want them to have a little bit of bite to them.
- Add the peppers and onions towards the end of cooking: This will help them to retain their crunch and flavor.
