Yield Makes 6 servings (as part of main course)

Number Of Ingredients 5

1 1/2 lb Broccolini (sometimes called baby broccoli; 3 bunches), ends trimmed
1/4 cup olive oil
2 garlic cloves, finely chopped
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Cook Broccolini in a 6- to 8-quart pot of boiling salted water until stems are crisp-tender, about 5 minutes, then drain in a colander.
  • Heat 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté half of garlic, stirring, until pale golden, about 30 seconds. Add half of Broccolini, 1/4 teaspoon salt, and 1/8 teaspoon pepper and cook, stirring, until heated through, about 2 minutes. Transfer to a serving dish and repeat with remaining ingredients.

Tips:

  • Choose fresh broccolini: Look for broccolini with bright green florets and crisp stems. Avoid any that are wilted or have yellow or brown spots.
  • Trim the broccolini: Cut off the tough ends of the stems, about 1/2 inch from the bottom.
  • Wash the broccolini: Rinse the broccolini under cold water and drain well.
  • Heat the oil: Heat the olive oil in a large skillet over medium-high heat.
  • Add the broccolini: Add the broccolini to the skillet and cook, stirring occasionally, until the florets are bright green and the stems are tender, about 5 minutes.
  • Season the broccolini: Season with salt, pepper, and garlic powder. You can also add other seasonings, such as red pepper flakes, lemon zest, or Parmesan cheese.
  • Serve the broccolini: Serve the broccolini immediately as a side dish or main course.

Conclusion:

Sautéed broccolini is a quick and easy dish that is packed with flavor. It is a great way to enjoy this healthy vegetable and can be served as a side dish or main course. With its vibrant green color and crisp-tender texture, sautéed broccolini is a surefire hit at any table.
